We made a low carb cheesecake this week, which was a recipe from the September Keto Krate. I love that they include recipes to use with the products they send!
I also had several low carb restaurant meals, and lots of simple/easy things – as it was a super busy work week.
My Low Carb Meals This Week…
One of the meals I had this week caused a bit of skepticism, on my part too. It was this beautiful seafood salad topped with avocado chunks that was stuffed in a Low Carb Wrap from Know Foods:
I really like the Know Wraps. 🙂 I put it on a baking sheet and added a serving (28 grams) of shredded cheddar cheese on top and toasted it at 350 degrees.
The “double take” was on the crab meat in my “seafood salad” – and to explain that, I have to backtrack a bit. 😉
The night before Aaron and I went out for sushi…
At some places I will special order, such as “a spicy tuna roll with cream cheese instead of rice” for example. But they had Naruto Style sushi on the menu at this place!
It was beautiful: crab, shrimp & avocado wrapped in cucumber:
I got an order of that to go, thinking it would make a great lunch the next day while I was working. But then I ended up taking it all apart, chopping up the cucumber with the crab & shrimp, adding mayo and stuffing it in the cheddar lined wrap – then adding the avocado chunks on top. 🙂
That was really delicious – but after I posted it, and “DUH!” in hindsight on my part (lol), we determined the obvious: that is NOT real crab. Imitation Crab is VERY high carb, so I went searching to figure out how to log it…
It turns out the crab sticks they use at sushi restaurants are called “Surimi” and they are only 1.9 carbs per ounce. 🙂 WHEW!

On Tuesday night, Aaron brought over my favorite low carb take-out: Cedar Plank Salmon from O’Charley’s, with asparagus and steamed broccoli:
I love the Cedar Plank Salmon from O’Charley’s because they fly it in fresh every single day – it’s never frozen! 🙂
It’s the only place I know of to get FRESH salmon in Tennessee.;)
Another favorite for easy low carb delivery is the “Naked Wings” from Domino’s Pizza.
I order them “bone-in, no breading, no sauce, extra crispy please” with ranch for the dipping sauce.
Obviously it’s been a week of convenience foods and eating low carb on the go between my busy work schedule and recovering from my whirlwind of a 3-day low carb road trip last weekend. 😛
Including this “quick grab” of a low carb breakfast to eat at my desk the first morning I was back to work:
I love the Know Foods Low Carb Cookies warmed up with cream cheese on them. 🙂
That plus some salted almonds and a bottle of water made for an easy, healthy breakfast.
These are NOT just cookies, by the way. They are HUGE and thick and made with super foods, so I use them as an easy meal replacement on the go.
If you eat them as cookies, definitely cut them into fours – or even eighths. 😉
I love the cinnamon, chocolate chip and double chocolate cookies from Know Foods. I also love the wraps and crepes, and just ogot the Thins (crackers) to try next. 🙂

Snacks I had this week include Blue Diamond salted almonds…
This is what 28 grams of almonds looks like, weighed out on my handy little digital kitchen scale of course. 😉
Last night I was hungry, but wiped out and NOT in the mood to even make eggs 😛 so I grabbed some beef bites and the Legendary Almonds from my last Keto Krate box:
My daughter calls the Old Wisconsin Beef Bites “dog treats” (lol) but admits they’re really good!;)

Aaron came over to do some baking. He loves playing in the kitchen with all my low carb products here. 🙂
He decided to make the recipe that came in the September Keto Krate Box for the low carb cheesecake, using the KZ Clean Eating Nougat Creme.
The addition of the ChocoZero White Chocolate Drizzle was my idea. 🙂
We didn’t add any erythritol or sweetener to the crust or the cheesecake like the recipe called for, so it was more like shortbread crust and a more traditional cheesecake – less sweet, but still rich.
Using the ChocZero White Chocolate Dipping Cup to drizzle a little sweet white chocolate over the top made it PERFECT. 🙂
I actually just finished off that cheesecake for breakfast this morning. 🙂
Speaking of breakfast, Aaron brought me some farm fresh eggs this week! I love those. They are SO rich compared to store bought eggs!
I used them to make rich cheesy eggs, scrambled in real butter with colby jack cheese – with 4 small strawberries and 18 grams of blueberries on the side:
Ooh – and I also found this messy piece of deliciously creamy low carb candy in my freezer, and ate that. 🙂
It’s a Dark Chocolate ChocoZero Dipping Cup with a TBSP of Almond Butter. I made it on my trip last weekend so it traveled all the way back to middle TN from Asheville NC, and melted and then froze again – but it was still delicious!!:)

Another new thing I tried this week are the Low Carb Crepes from Know Foods.
They are darker than the wraps, and have a slight cocoa taste to them (just barely). They’re delicate – but delicious!
I stuffed the crepes with cream cheese and strawberries, fried them in real butter, and topped them with blueberries then added a drizzle of ChocZero White Chocolate using one of the dipping cups:

I’m on the R&D Taste Panel for NUSH, so I got to try the new flavors this week, including: blueberry, peanut butter, pineapple mango and cranberry almond cakes.
The most exciting part: they have them down to zero net carbs! 🙂
Aaron and I made a meal out of the taste-testing, topping the new cakes with pats of butter while we filled out the Taste Panel forms. 🙂 Yum!
I’m glad things are finally slowing down a little. I actually sat down last night and made out a grocery list. 🙂 It would be GREAT to get some low carb staples in the house for simple meals – but it’s been nice to have some easy things on hand this week!
I enjoyed taste-testing some new low carb foods too. 🙂
My biggest goal right now is to get back to my workouts – and my hikes. I miss them both, and really miss feeling strong and lean! Muscle tone and core strength feels SOOOO good. So that’s my motivation, and my priority at the moment. 😉

Most of the Know Foods products list coconut as one of the main ingredients. They make all of their products with real foods. I don’t think I taste or “feel” any coconut in the wraps or crepes at all though. Definitely in the bars & cookies. I made the brownies “straight” the first time. They were good! I think peanut butter or even a cream cheese swirl sound good for next time. My husband would like them with pecans.
We will check out the thins next. I’m such a texture girl, I have divided plates.
BTW, I used carb quick to make some sausage balls and they were super!

I’ve never used Carbquick before, so that’s good to hear! I have used Almond Meal to make sausage balls, but then discovered I like spinach & parmesan just as well – to make any kind of meatballs.

First of all, I am in love with KNOW CHOCOLATE CHIP COOKIES! Don’t even need a 1/4 of a cookie to take care of my chocolate cravings! However, although I also like the croutons, I’m still not sure about the wraps. Don’t like the consistency. Even after putting in the toaster oven! Can you give any suggestions?

I put mine in the oven with a serving (28 grams) of shredded cheddar and bake at 350 until the cheese is all melted. That firms them up nicely. Plus a cheddar lined wrap is delicious!! π
