I had a fun interview on the GCTV Morning Show last week about living low carb and the keto lifestyle! 🙂
I included the video of that interview below, along with a video I shot for you afterward.
First though, a quick photo tour of the low carb meals I’ve been eating since my last low carb food diary update.;)
My Low Carb Meals This Week
Aaron came over and cooked us a nice low carb dinner last Wednesday night: grilled salmon with roasted cauliflower & Pili Nuts. ❤ Delicious!
He won’t share his secret salmon marinade/rub recipe but I taste ginger, lemon, black pepper, soy sauce, and something else I can’t quite put my finger on… 😉
We were both working here from my home office, so I made us a low carb snack plate. Just colby jack cheese sliced off the block, raw pecan halves & sliced fresh strawberries:
Other meals I’ve had over the last week include my favorite “low carb cereal” of pecans, Daisy brand cottage cheese & strawberries – sometimes with blueberries too! 🙂
I ordered Low Carb Delivery for dinner one night: a hamburger steak with sautéed veggies from a little local place.
I got a side caesar salad with that meal too, but saved it for later.
The next day I browned two Know Foods Gluten Free Low Carb Wraps in butter in a non-stick skillet, and stuffed them with the caesar salad and topped them with tuna as a quick meal.
That made for a very filling, quick & easy healthy low carb meal!
I had my favorite “cheesy eggs” several times too…
I make 4 eggs with colby jack cheese, scrambled in real butter. I can’t eat it all at once, so I usually make two meals out of it.
While I was out of town I grabbed a quick low carb breakfast from McDonald’s: “2 sausage patties and 2 round fried eggs, please.” Easy! 🙂
I’m still experimenting with the Know Wraps, so the next time I put them on a baking sheet with cheddar cheese on top, and baked them at 350 until they were nice & toasty:
I browned some Tyson Grilled & Ready chicken strips in butter, and stuffed them into the “cheddar wrap shells” along with chunky salsa and mozzarella cheese:
That was delicious. 🙂 I may have that again today!
I had a gift card for Applebee’s, so for dinner last night I called in a nice dinner from their Carside-to-Go service.
I got the caesar salad, but with grilled salmon AND shrimp (instead of chicken) – and no croutons of course. There’s an upcharge for the salmon, and the side of shrimp was extra too, but it was worth it. 😉
I made two meals out of that, and the second time I added a serving of big buttery-soft Turmeric & Black Pepper Pili Nuts to the rest of the salad. 🙂 Yum!!

After I left the studio I stopped in at McDonald’s to use the wi-fi and do a little work, and I shot this video for you. 🙂 I talk about “always being prepared, even if you never do any real prepping or planning.” 🙂
I did change and do a little hiking after that last video…
I had some skittish moments in the woods, and some “off days” following – all of which is unfolding into some enlightening insights, and what may end up being a turning point with deep revelations.
Which is good, because I’m ready for positive change in my life! 🙂

Great interview Lynn! The way you weave your own stories into what you want to say makes it engaging and fun to watch. I just noticed the number of views – very impressive! The recipes are simple and easy to cook. Plenty of ideas for low carb lunches/dinners.
I have been a bit snowed under lately, trying to dinish too many things to a deadline. Some of them are big time suckers which makes things stressful, as other tasks don’t get done. I know it’s a lame excuse, but I haven’t been tracking my macros lately. As a result, I’ve put on 1kg (2 pounds) over the past 2 weeks. Feeling gutted. I think much of it is water, since my salt intake is quite high, even though it’s good quality Himalayan salt.
What I want to say – your posts and emails make me pull myself together when I want to quit, and keep going. I have been on low carb since ealry August and it would be huge sign of failure if I did – unless I did it consciously and with a good reason, and I don’t have any.
And your “be prepared” video is a nice reminder to think and plan ahead in every situation. I hope you’ve enjoyed the hike and sunshine! π

I did, Galina – thank you! π I totally get that with being busy. Stress itself, and even lack of sleep (or quality sleep) will cause my weight to stall or fluctuate. Salt is actually your friend on a low carb diet IF you are in ketosis, as a keto state is a natural diuretic. It could just be that you’re out of ketosis. π
I’m so glad you find it motivating and inspiring. That’s the reason I do what I do! Just don’t let a pound or two derail you, when you’ve made so much progress already. Switching over to a healthy lifestyle and a healthy mindset is a process, but it is SO worth it!! π

I just hopped in here, I get your emails, I have been in keto for 5 weeks now and I have been totally wiped out, no energy at all. I just feel drained . I have not lost anything and am getting depressed Iβve worked so hard at it. What could I be doing wrong. My clothes arenβt fitting either so the fat Iβm eating is not burning, my calories are at 1000 thatβs where my doc said to put them. Can you help me, when I get back from my walk I can barely make it thru the rest of the day.

Thank you for the encouragement Lynn – it means a lot to me! π I agree about sleep. I go to bed at 4am these days, which means not getting enough melatonin. And that in itself can cause weight to stall, as you have rightly said. While I love working late, I get up too late as well and not feeling fresh. So I think this needs to change.

If you feel it’s affecting you, or having a negative impact on your health or work, for sure. I love the late hours too, and keep a very fluid schedule myself. As long as I get enough rest I seem to do fine. π Now stress, that’s another matter -lol.
