I feel like there have been two full weeks packed into the last ONE 😛 ack!
Between my 3-day Low Carb Road Trip and a full work schedule, I’ve been going nonstop lately.
Fortunately I did squeeze in time for a walk in the sunshine on Sunday (goofy photos below! 😉 ) and I’m taking off for some downtime on Wednesday, which I am VERY much looking forward to.:)
Here’s what I’ve been eating in between all the madness of my crazy schedule the last few days…
My Low Carb Meals on Sunday
For breakfast on Sunday morning I had to grab something quick and easy, and I had this Quest Bar left from my road trip – so I had that with two servings of almonds.
(It was awful 😛 blech!)
It was way too sweet for my taste, but I just went ahead and ate it anyway…
I truly should have just tossed that and made some eggs, except… I was out of eggs that day!
I had to run a few errands later in the day, so I grabbed a plain Low Carb Burger from Hardee’s while I was out. I ordered it “plain with cheese” so it wouldn’t drip all over me. 😉 It’s a 1/3 pound burger in a lettuce wrap, which is on their menu.
I was definitely ready for a GOOD meal by dinner, so I called in Applebee’s carside-to-go. They have a GREAT 2-for-$20 menu, and I knew I’d be super busy for the next couple of days, so I ordered two full meals to go:
I ordered the Fiesta Lime Chicken with no tortilla strips, and steamed broccoli instead of rice. With the 2-for-$20 deal you also get an appetizer, and one of the options is two side salads – so I got caesar salads with no croutons.
I ate one of the meals and half of one of the salads for dinner that night…

My Low Carb Meals on Monday
I had eggs for breakfast on Monday: cheesy eggs scrambled in real butter.
I had an early appointment, so I grabbed 2 servings of almonds to take along with me so I wouldn’t have to stop anywhere while I was out:
I didn’t end up eating those though, so I had them when I got home along with the other half of my caesar side salad from Applebee’s that I didn’t finish the night before:
Then for dinner I ate the other chicken & broccoli meal. 🙂 Easy!
I was up late with work (I teach on Monday nights) and I got hungry again, so I had half of a Low Carb Bar and half of a Double Chocolate Cookie – both from KNOW Foods. I definitely prefer the cookies to the bars.;) Those are SO good!!

I had cheesy eggs again for a late breakfast, and I had one full caesar side salad left from my big take-out order… so I had that for lunch/dinner with 1.5 servings of Turmeric & Black Pepper Pili Nuts. 🙂 YUM!!
I prefer the Spicy Chili Pili Nuts when I’m cooking with them, but the Turmeric & Black Pepper was the perfect match with a caesar salad. 😉
Then I finished off the last of my KNOW Foods Healthy Low Carb Cookies… and ordered some more. ♥

I’ve been trying to talk Slim (my great dane) into helping me with my exercise goals, but all he wants to do is roll in the grass, play in the fountain, and drink my water. 😛 🙄 haha – He’s getting old, but with the weather cooling off hopefully I can get him to walk at least a mile with me most days. 😉
I hope you enjoyed this quick photo tour of my low carb meals for the last three days, and it gives you some ideas for thinking ahead and keeping it simple when life gets BUSY on you! 🙂

Slim is so dang cute π My Bulldog Juice doesn’t dig the walks as much anymore, we pretty much have to drag him along, but he likes to be let loose down by the river lol then he runs around. Things are going well here, staying low carb and active and motivating people to keep moving w/ me feels awesome! Enjoy your downtime! π Have a great day.
