I’m headed out on another fun Low Carb Road Trip, so I’ve been busy getting packed- and deciding which low carb foods to take along with me.
This time I did some fun & easy baking to “food prep” for the trip.
Actually, Aaron did the baking while I packed – and took photos and wrote this update for you. 🙂

I looked around the kitchen to see what I already had on hand, and found enough fun stuff to create some LCHF cookies and bars that are compact yet calorie dense – making them perfect for traveling, and hiking too!
The “low carb thumbprint cookies” turned out fabulous:
For those cookies, we used the Adapt Meal Recipe that came in the last Keto Krate box. The Adapt Meal is a product you can use to make low carb shakes or hot cereal, but the recipe seemed much more appealing to me. 😉
I opted for no sweetener, because I like more of a shortbread style cookie. But we did add some Sugar Free Honey to the actual recipe, and then Sugar Free Preserves on top – plus a little peanut butter & plenty of pecans!

We made 11 pretty large cookies out of the batch.
I also had another bag of Good Dee’s Snickerdoodle Cookie Mix, and plenty of pecans left, so we combined those to make Snickerdoodle Pecan Bars. 🙂

Above are the ingredients we used to make the Snickerdoodle Pecan Bars, sticking to the basic cookie recipe and just adding LOTS of big pecan chunks. 🙂
It was baked on parchment paper in a cake pan just like I made the low carb pie crust, then cut into squares.

This, along with other things I’m packing up to enjoy on the go, should make for an tasty road trip! Our goal is stop LESS for meals, and MORE for fun. Especially if there are waterfalls along the way. 😉

The recipe card from Keto Krate says 390 for 15 – 20 minutes. The Good Dees Snickerdoodle box says 350 for 11-13 minutes. If you use those you’ll probably be close enough, just keep an eye on them π

Right, I went by the recipes on both packages, and they were done separately – not baked at the same time – so we just went by the directions. π
Apologies for not mentioning that, but you’d need the packages anyway to make them. π As an alternative, I make cookies and biscuits and garlic cheese sticks and all sorts of other “baking stuffs” with the same base recipe that is very easy (and extremely versatile!):

Great, Dawn π I knew I wanted to add pecans and honey and basically just something to “dress up the recipe” and also add some hearty nuts. Pecans are so low carb and high fat, and a great real food to add to so many things. π
They are a little chalky compared to my almond meal cookies, but very high calorie and dense (for a small cookie) AND they stay together – which has made them great to have on the road and on the go this week. π
Hmm, chalky wasn’t the right word. Maybe just dry. But the plus side is that it forces me to get my morning water in. π lol
