Today is our Week Six Weigh In, so it’s time to check in and share your total number of pounds and/or inches lost since Monday April 3rd!;)
Apologies for not sharing my food diaries each day this week…
I’ve been super busy with work, and also preparing & packing for a FUN “Low Carb Road Trip” too. 🙂
I’ve been staying on track of course, with my usual macros (20 net carbs max, 70% fat minimum), and sharing my low carb meals as I go on both Facebook and Instagram if you want to check in there.
I’ll share my FAVORITE meal from this past week with you, because it was absolutely delicious – and chock full of healthy vegetables! But also super easy because… well, you know: I cooked it. 🙂 haha
I also want to introduce you to some new low carb foods I’m trying because you’ll be seeing those in my social updates this week while I’m traveling, and in my upcoming food diaries. I’ve been playing “Mikey” for you again, lol. 😉
New Low Carb Foods I’m Trying
I already told you about the delicious Zero Net Carbs (Gluten Free) SmartCake. I’m totally hooked on those! In fact I had them for breakfast this morning topped with cream cheese, peanut butter & Sugar Free Hazelnut Chocolate Spread:
YES this is low carb 🙂 lol. It’s three flavors of low carb cake with ZERO net carbs (coconut, cinnamon & chocolate) topped with cream cheese, peanut butter & sugar free hazelnut chocolate spread. Yum!! 😉
The Cinnamon SmartCake came in this month’s Keto Krate Box, so a lot of you got to try that one. Delicious, wasn’t it?! Wait until you try the coconut flavor!! It’s the BEST, and I’m not even big on coconut flavor.;)

Delicious Low Carb Vegetable Recipe – Super Easy!
The other night I came in hungry after a fun hike, and all I really had was a bunch of frozen veggies… so I threw together an amazing meal with them. 🙂
It was really easy: cauliflower rice & diced sweet onion sauteed in real butter, with Spicy Chili pili nuts added, then topped with roasted broccoli cauliflower & asparagus:
I used this Riced Cauliflower:
I diced up a sweet yellow onion and sauteed that in real butter, then added the riced cauliflower (and more butter & salt) and Spicy Chili Pili Nuts to give it a little kick. 🙂
The frozen veggies were roasted crisp in the oven at about 400 degrees, after being tossed in olive oil and garlic powder.
Super easy all-vegetable meal, and… Delicious!!

I’ve lost 10 pounds since the challenge started and and 18 lbs total since I started eating LCHF toward the end of March – been at it for about 9 weeks total. Still have an extremely long way to go, but I think I can make it π

I’m down 2lbs this week, total 7lbs since I started on April 24, so a little over 2+ lbs a week. I’d like more but I know that 2lbs a week is good. I don’t exercise and I don’t think I’m in ketosis π so I’m happy that I’m still losing. The weekends are hard and especially this weekend, Mother’s Day. My hubby wanted to make me breakfast, he’s a good cook and makes great breakfasts! So I asked for bacon, scrambled eggs and cream cheese pancakes w/sugar free syrup. It was good π and I stayed good LOL.
That picture of the cupcakes is so pretty but my goodness the strawberries are almost as big as the cupcakes, they look tiny. I’d love to order them but they’re so expensive, it’s too bad. Sorry I’m such a kvetcher LOL.

Hi Roye π I was just replying to you on another post – so you were losing around 2 pounds a week on average and it slowed to half a pound a week on average. Correct? That’s totally normal! You’re doing GREAT. π

189.8 this week, I do great, then come to a crawl, and tomorrow I leave for vacation. I hope I am able to stay down, I have been in this rollercoaster for several months. Wish me luck, and I am determined to stay focused.

If you follow the scales only, it really IS a roller coaster. I say get OFF the dieting roller coaster altogether… and just focus on living a healthy low carb lifestyle. π It’s so much less stressful!

I have just started following your site and I love it! I have been doing low carb for about 4 months and have lost about 18 pounds. I just started low carb about a week ago and I have lost 4 pounds! Since I started my diet one month ago I have lost 12 pounds so exciting! 28 more pounds to go I started at 169 today I am at 158

Congrats, Erica – and kudos for taking control of your health & weight loss goals! π Don’t be surprised if things slow down a bit for a week or two. If they do, that’s totally normal – it’s just your body adjusting to the initial weight loss. So keep doing what’s obviously working so well for you! π *cheers*
