I had some “interesting” low carb foods this weekend, so I’ll share those with you below. It was all delicious. 🙂

Saturday’s Low Carb Meals
Saturday started with a delicious dessert for breakfast. 🙂 I had FOUR chocolate chip keto kookies topped with cream cheese, butter & walnuts! OMGosh…
This was my hangover cure from all the low carb beers on Friday night. 🙂 😛 Well, this plus 24 ounces of cold water and some Advil, lol.
I warmed it up and stirred it all together into an ooey gooey chocolatey, buttery, creamy, nutty bowl of total deliciousness!
I’ll definitely be having that again! ♥
My low carb lunch was take-out from Prater’s BBQ: a rack of ribs (no sauce, please) and a side salad with ranch dressing.
This was “low carb for two” with some leftover even…
For dinner that night I had my favorite “low carb cereal” – and added the Coconut Goji again. It was a great combination of healthy foods! 🙂
It’s 1/2 cup pecans, 1/4 cup Daisy Cottage Cheese, 4 small strawberries + 2 tbsp Coconut Gogi (a serious nutrient dense super food I got in my last Keto Krate):
I stir it all together and eat it like cereal. 😉
That bowl was 7 net carbs and 83% healthy fats…

Sunday’s Low Carb Meals
My low carb breakfast on Sunday morning was a simple one-skillet meal of bacon and fried eggs. Easy & delicious! 🙂
For lunch – or really, the rest of the day – I just snacked all afternoon…
I had 2 pieces of leftover bacon from breakfast, some Russel Stover sugar free “Blueberry Bites” plus the Pizootz peanuts & Dark Chocolate Raspberry Bar from the March Keto Krate box.
Those sugar free blueberry bites were the best thing of the afternoon, but they made me VERY gassy 😳 lol. I *know* they were the culprit because they have malitol in them. I only ate FIVE by the way, not all 10 – thank goodness! Because my tummy is still recovering… 😛
When I bought them I actually thought they were chocolate covered blueberries – but it’s a blueberry flavored center instead. They’re delicious, but be warned (lol).
For dinner I had the leftover Grilled Salmon and “Loaded Broccoli” from my dinner out at Logan’s Roadhouse the other night.
Dang, that was good. 🙂
I stirred it all together, with the sour cream & butter that was on the broccoli. YUM!

What a great idea for those cookies. I really like the cookies but they have such a strong sugar flavor that adding cream cheese might be the perfect combo. THANK YOU!

I agree, they’re a little sweeter than I’m used to (I make my own low carb cookies more like shortbread, than real cookies) so this was GREAT! I think next I’ll try the Snickerdoodle with walnuts, cream cheese and… peanut butter. π YUM!

Good morning, just came back from a road trip and proud to say I stuck with my Lchf diet and logged, it shows, this morning I am down 2.8 lbs. I am pleased with that. Have been trying new foods , and finding some really good low carb recipes on pinterest. Thanks Lynn for the new ideas. And by the way, I tried Quest bars and I am not impressed, actually took one small bite and I am done. I have a whole variety box but don’t think I’ll be trying anymore

Way to go, Sherry! π Most people really struggle eating low carb while traveling, but I actually prefer it – for all the fun (new/different) low carb options along the way. π
I haven’t had Quest bars in awhile, but I used to LOVE them. Which did you try and not like? It seems I had my favorites. Was it the taste or the texture?? I think we’re all different in what we prefer for both taste and texture with bars. Are there any bars you HAVE liked so far?

Hi Lynn, I tried the strawberry cheesecake, awful:p. I did not like the taste or texture. What was your favorite? I like Atkins bars, but don’t usually buy them, only on occasion. I prefer real food myself, lol, but I do enjoy sweets, so I venture out of my safety net at times, lol.

Do you intermittently fast? I believe that’s as important or even more important than LCHF.

I don’t, Mark – but I talked about that awhile back. The reason I don’t is because I had to overcome a lot of eating disorders and emotional attachments to food during my weight loss journey – and overeating AND not eating were both forms of self punishment/indulgement… so I simply eat when I’m hungry, and don’t when I’m not. Which is why you don’t really see me snacking between meals. Other than my “snack meals” lol.

Intermittent fasting helps to stay in the fat burning metabolic process which theoretically stops cyclic hunger and anxiety caused when the glycogen stores are consistently filled and depleted. This is some of what I’ve learned from “The Obesity Code: Unlocking the Secrets of Weight Loss” by Jason Fung. Intellectually I comprehend this but I haven’t gotten there consistently. I was sidelined by an appendicitis in January, so I’m just getting back to it. Getting started again is hard.

I started 2 days ago. I am in my 3rd day. At first i am soooo hesitant to start because i am type 2 diabetes…..taking metaglip 2 cap in the.morning and 1 1/2 in the evening. My 2nd day of doing my diet itbis so scary that my sugar goes low. Very low. So i adjusted in 1 in the morning and 1 jn the evening. Still my blood sugar goes low. In my 2 days i just take 1 cap in the morning and look …..i was so amazed my blood sugar ranges to 99 to 107…..i will wait for another week and see….by the way my do tor advice me to go in a low carb diet and walk for 30 min a day. She made a follow up today and i told her of this experience. She said i will continue of what ia doing …suggest that i will write everything and she will call back in 2 weeks. What great and amazing this diet is. If it will will for me the i would say this is the best cure for diabetis…..thank you to my son who introduces me to this diet…

I also have type 2 diabetes. I was told by my doc to try a low carb diet. I am willing to give it a try to hopefully lower my sugar and my weight!

Hi Lynn, it’s Maria again. We commented back and forth a couple of weeks ago on how I’m not loosing and needed to up my fat intake. I’ve been following the recommendation precisely and I’m still having no luck. I fluctuate up and down by 4 pounds and I get no further. Could it be that it’s my hypothyroidism? I’ve had it since I was a teenager and never really ran into a wall like this trying to lose weight. I’m baffled.
Have you ever heard this issue from anyone else? It’s such a bummer. I’m so careful in doing everything precisely. Thanks again.

Hi Maria π I’m not familiar with hypothyroidism but I would definitely do some research on that – Google it, but also ask in some low carb and/or keto groups online to get some feedback from others that have personal experience with it.

I have hypothyroidism and lost 2.8 lbs last week giving it my all. However, I have been up and down for about a month, but I attribute that to my own sabotage, I have lost about 30 lbs since starting in November sometimes I feel that is slower than others but I am ok with that. I know it doesn’t help your questions, but thought I’d share my experience. Don’t give up
