I’ve had fun playing in the kitchen some this week! From the Blueberry Pecan Crepes to the Sausage Biscuits, then the Stuffed Mushrooms yesterday – all low carb of course. 🙂
And guess what?? I have a mixing bowl and a NEW kitchen gadget pulled out this morning to try something new today!
I’m a little wary about how it’s going to turn out (lol) so stay tuned for tomorrow’s post to find out…

Here is my Low Carb Food Diary for Day 47 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s not too late to join us if you haven’t already!
Day 47: Friday’s Low Carb Meals
I had m favorite low carb breakfast: a healthy combo of 1/2 cup crushed pecans, 1/4 cup Daisy Cottage Cheese & 4 small diced strawberries = 5 net carbs and 85% healthy fats.
For lunch I made Justine’s Low Carb Stuffed Mushroom Recipe and ate three of those. That means I have 7 left to enjoy today. 🙂 🙂
I had some venison steaks a friend brought over so I ate those later in the afternoon, dipped in mayo. The picture didn’t turn out so great, but they were really good. They had just a bit of crushed red pepper mixed in.
I got hungry again so for dinner I had my “low carb cereal” (same ingredients and macros as my breakfast). It’s just so quick & easy, it’s healthy foods, and it has great macros. I keep these ingredients on hand all the time – for those reasons.
I’m not boring, I’m just… consistent. 😉
There’s nothing wrong with a woman that knows what she likes! haha

I didn’t exercise yesterday – again. That makes two days in a row! I didn’t feel well again either though, mostly tired with a relentless headache.
I’m guessing the keto flu is dragging out on me longer this time than usual – from my off plan day last Thursday.
I really must get moving today! 😛
Speaking of, Joe and I made the front page of Friday’s local paper (the Southern Standard Newspaper) walking our boys downtown recently. 🙂 It’s always quite the head turner when we walk the Great Dane and Chihuahua together, lol.
I’m just having my coffee as I write this, deciding what all I might cook or eat today – and which workout I’ll do, because I simply can’t go a third day in a row without getting some exercise. 🙄 I’m still 147 pounds, but every one of those pounds could look A LOT better on me than they do right now. 😛

I have absolutely loved reading your day by day victories, bleh moments, and just doing life! You’ve encouraged me with all your stories. Thank you for responding when I asked about how to survive buffets…I’m seeing how I eat and where to make changes. I have to share my victories with you! So I went to my fave restaurant and did not cave into getting a high carb meal! Instead I ordered a ginormous burger with a Ceasar salad and then a low carb cheesecake for dessert. My other moment was walking away from apple fritters at a continental breakfast! I had coffee with creamer and walked away. My tastebuds have been retrained and I feel I don’t have the same hankering for sweet things like I did. I lost nearly 4 pounds this week and 10 since we started! When I think I’m hungry I make coffee and just wait to see if I really am hungry or if I’m eating out of boredom or emotion…thanks again for the support and for doing life with us!~~~Geri

I often eat the lowcarb cerealtwo times a day too! I love the delightful mixture of nuts, berries and cottage cheese. Yummmmim
I tend to eat the same things,all the time too
I would like to try the sausage rolls or low carb biscuits sometime too. Those look delicious but ithink I’d prefer using the sausage crumbles recipe instead. I really do not like greasy stuff. π
I do miss having something like bread once in a while so i can have something to spread my SF jelly on. π
I ordered the l o w carb chicken meal from Lee’s restaurant (do you have this in TENN.?)
It consisted of three pieces of rotisserie Chicken (nicely seasoned) with a side of green beans. It was yummy!
I am still at the hotel. I had two boiled eggs for breakfast from the hotel free breakfast kitchen. I passed on the muffins, waffles. Rolls cereals and fruit. Good thing they at least have something i
ca. Eat. Free coffee too….but no sf c r sticj7eamer. I have my own creamer in my room. π
It really was not difficult for me to pass up the (free) goodies. It is just habit now to pass on it all…….i hope these new habits stick…for good. It feels great to be in control!
I must admit yesterday i was craving something sweet. I would have loved to hace some sf chocolate but i ate my strawberries and liw carb cereal instead. π

Like you, I really love being in CONTROL now. I think that is one of the best perks to overcoming old habits and creating new healthier habits. It feels GREAT! π
We don’t have a Lee’s here, but that sounds fabulous!!
You can make the bread plain, just don’t add sausage. It’s really nice with the sugar free preserves, or even split in two to make a sandwich with meat & cheese.
