Did you miss me? 🙂 I’ve missed you!! I thought we’d catch up real quick…
I came down with a cold this week. The cold itself was pretty wimpy, but the chills and overall icky feeling totally did me in.
I couldn’t sleep, all I wanted to do was sleep, I was tired and restless and cranky. 😛 Not a fun week, lol.
I’m SO glad that’s behind me! I’m not quite feeling 100% but tons better. For some reason, when I can’t sleep well – or when I feel stressed – my scales will NOT budge. I’ve noticed that’s a common theme over the years. There’s science to that, but I know everyone is different.
Insomnia & Stress are definitely both stall culprits for me personally.
I did wake up 1.2 pounds lighter this morning after FINALLY getting some solid sleep. 🙂
Anyway, between feeling icky and taking cold meds, I had zero focus to sit down and write. I’ve been trying to share my low carb meals on Instagram and Facebook as I go though, but I miss sharing my low carb food diaries with you here!
Let’s start with my complete food diary (FIVE meals, lol) from yesterday…
Thursday’s Low Carb Meals
I started with a super-early breakfast: my favorite “low carb cereal” 💙 This time it was 1/2 cup crushed pecans, 1/4 cup Daisy Brand cottage cheese, and 4 small diced strawberries. (5 net carbs and 85% healthy fats)
This time of year I use frozen strawberries (with only ONE ingredient: berries). They’re actually quite good, and I like that I can take out only what I need – and the rest never go bad, unlike fresh berries.
The brand of cottage cheese you use makes ALL the difference, by the way. Daisy Brand is the absolute best! It’s “the daisy difference”. 🙂
Not only does it taste better than other brands, it only has THREE ingredients – all real foods you’ll recognize. Every other brand on the shelf has a whole paragraph of ingredients I can’t even pronounce! 😛
I had a “second breakfast” late in the morning (closer to lunch) from a little local diner. I got take-out of course, my usual lol! It’s 3 fried eggs, 2 slices of bacon & a piece of grilled tenderloin.
My next two meals were both leftovers I had in the refrigerator. I had 5 meals yesterday, spread out over the (very LONG) day.
For lunch I had this leftover pulled pork & green beans from a local BBQ place. I just heated it all up together and added 1/4 cup of chicken broth over it when I warmed it up. That was delicious. 🙂
The leftovers above were a second order of this same plate I’d had the day before (below). I got this take-out from “Collins River BBQ & Cafe” (a local place). It’s just pulled pork & green beans. Basically just a sandwich without the bun & sauce. 🙂
I do that a lot – order more than one meal when I get take-out. I call it Low Carb Grocery Shopping. 🙂 LOL… It really does help to have extra things on hand, especially when I’m not feeling well and do NOT feel like cooking!
I did the same thing at Hardee’s this week, and got two “Big Hot Ham & Cheese” sandwiches, without buns. That made for a quick and easy meal – and only 3 carbs.

I had my “cereal” (nuts, berries & cottage cheese combo) again before I went to bed last night. You can see that in my diary below. You’ll notice that I usually enter foods individually. It makes it much easier to get correct macros.

As you can see, my day came out to 28 net carbs and 72% fat.
I shoot for 20 net carbs max, and 70% fat minimum but it’s never quite “exact” – just the target. I was also awake way more than I should have been, so the “first breakfast” happened well before daylight. 😛 It was a LONG day, lol…

My current weight is 154.2 (yes, about 5 pounds up!). I leave for my next trip in 12 days, this time to Orlando – where I look forward to lots of lovely low carb meals, and tons of fun with my friends! 🙂 Now that I’m feeling better I’m getting back to my workouts. I was only able to do two (kinda wimpy) workouts this week.

I find it always helps to have something to look forward to, something to motivate you to stay on track with your goals. Sometimes I’ll even come up with fun things to look forward to just to keep my motivation strong – like planning a lunch with an old friend, or maybe even a new one. 😉

I sized up, by the way. Mine is an XL – and I wear size 10 jeans, 5’5″ around 150-155 pounds (depending on the day lol), 36DD top.
I can’t recommend the dress enough. It’s definitely going to be a favorite!! Something about the way it’s cut, and the way the stripes are done, really makes you LOOK thinner and curvier – in all the right ways. 😉

I’m 5’5″ – and I did size up so I could wash & dry it (in case it shrank a little lol). The red is available in XXL right now! Check out the size chart, and the reviews – it really depends on how you want it to fit too. Mine has a little room in it. π

I love reading your blog! I’ve been low carbing for 1-1/2 years. Initially I lost 25 lbs (at that time needed to lose 10 more). The last 6 months though I’ve gained back most of that weight so I’m right back where I started. It began with a two-week Alaska cruise and land tour, followed by back to back company through Thanksgiving, then Christmas, then… then… You know, it’s tough to get back on track after being off track that long. Throughout those months I *basically* ate LC most of the time. It’s things like wine, a dessert here and there, far too many dinners out, etc. that did me in. I’ve finally gotten my eating back under control but I’m finding it very hard to give up my night glasses of red wine. If I can somehow manage to give that up, I think I can tackle losing the weight. Sigh…

I totally get that Betsy. It really sneaks up on you fast, it does for me too. It only takes an off plan choice here and there (not even a whole meal!) for me to start gaining consistently. π
You might look for a red wine that is lower in carbs. I have heard others talk about options, but I rarely drink wine anymore so I wasn’t paying close attention. When I do have a drink it’s usually just White Zin – because the reds give me a migraine. But yeah, alcohol metabolizes so much slower than food, so it can make it harder to lose weight…

Lynn I love your low carb breakfasts. The strawberries actually look like jam to me though π Do you add sweetener? Is adding a bit of Splenda allowed?

It’s because this time of year I’m using frozen berries – and if I let them thaw too much before I dice them up… they’re all juicy. π I don’t add a sweetener but you certainly can – or a splash of vanilla atkins shake over it would be good too.
