The 3IMAX low carb challenge is coming to an end in a few days (on Wednesday, July 15th) and many of us are planning to continue on with the KISS concept.

I’ve been journaling my meals & macros through every single day of the challenge, which you can see here, to give you EASY low carb meal ideas.
Day 11 fell on a Saturday, and Ricky and I decided to take the boat out on the lake. We started the day with a big breakfast. Both of us are usually light breakfast eaters, more like “morning snack” type people lol. He likes to cook on the weekends though, which is GREAT (for me) because we spend most weekends together. 🙂
Day 11 Low Carb Challenge: My Meals & Macros

This ^ is a His & Hers cooler. His on the left, mine on the right. 🙂 He likes Rolling Rock beer, and I prefer Michelob Ultra – which is a great low carb beer.
He also eats carbs, so my snacks are: green olives, sliced ham & sliced cheddar cheese. I simply raided his refrigerator and threw in whatever I could find.
I wore my newest Fabletics tank over my swimsuit. I love (love, LOVE!) their new flowy open-back tanks. 🙂
This tank came as part of a new 3-piece outfit I ordered, and the sports bra I got this time is AWESOME.

There are lower carb beers. Budweiser makes one I think. But I prefer Mich Ultra for the taste. It’s 2.6 carbs per 12 ounce bottle. I rarely drink, and when I do I’m a total lightweight lol. I had 2 1/2 beers while we were out on the boat.
You’ll notice that alcohol hits you harder and faster when you’re in ketosis. It’s better to know that upfront, lol. It also metabolizes slower than food resulting in “the alcohol stall”, so don’t expect the scales to move for a few days after you drink.
Anyway, for lunch I just had a few slices of ham and cheese – and three olives. I was feeling a little woozy after a light lunch and a few beers… and the HEAT. 😛
We decided to call in a take-out dinner when we got back…
This hamburger steak with double green beans usually makes two full meals for me, but I ate almost ALL of it last night. I was HUNGRY lol.
(Seriously, that thing is the size of my head!)

1649 calories, 21 net carbs, 27 total carbs,
66% fat / 29% protein.

I love your journals!!! They keep me motivated! I lost 3 lbs last week and feel great! I’m glad you mentioned the alcohol stalls. This weekend we went camping. I stayed under 20 net carbs each day (so proud!), but had 2 vodka & diet ginger ales fri as well as sat night. I’m still in ketosis, but feel bloated! I will weigh myself tomorrow to see what I weigh. Is it common to gain Weight or get bloated in this situation, even if staying under 20 net carbs?

Thank you, Melissa! It very well could have been the alcohol, or maybe just the heat – or possibly part of your monthly cycle. We all have cycles (even men!) with our hormones, etc. I notice occasional bloating as well but haven’t quite tracked the culprit.
I just make sure to drink enough water (not too much) and get plenty of salt. Lack of salt or too much water can both cause you to feel bad, get leg cramps, etc. Especially if you were sweating a lot. If you do experience headaches or leg cramps, sipping on chicken broth is an easy way to replenish your sodium & electrolytes.

That’s one thing also did- drink about 10 cups of water a day. Didn’t even think about the hormones!! Thanks so much for the advice and Encouragement. Thanks to you, I have lots of quick ideas to stay on track!

How do you stay motivated? I am so frustrated with myself. The summer for me consists of entertaining, which always involves alcohol (red wine). I also get very bored with the same foods and don’t have much time on weekdays to fuss with a lot of preparation. I normally fall back on grabbing a protein bar as my quick meal. I also seem to always be hungry. (I am taking medication that may be a contributing factor to that though).

Hi Jennifer π I do ZERO prepping, lol. See: http://www.travelinglowcarb.com/4945/simple-low-carb-diet/ I pretty much eat on the fly, which ends up being a lot of low carb take-out and easy stuff – as you’ve likely seen in my daily journals.
I have an instant migraine with red wine, which is too bad because I LOVE the taste! I drink a white wine that is 1 carb per ounce. That can still really add up. Someone recently asked me about Cook’s sparkling wine / champagne: http://www.cookschampagne.com/cooks-california-champagnes.php and it looks to be VERY low carb! Lately I just sip on Captain Morgan’s spiced rum with diet coke. But I’ve never been much of a drinker.
Otherwise I do easy grab ‘n go stuff. Or if I do cook (rare, lol) I go ahead and cook extra to last at least another meal – if not two. It’s just as easy to steam a huge pot of broccoli as it is a couple of servings! π

As for always being hungry, that’s a surefire sign you’re not in ketosis – as it’s a natural appetite suppressant. People eating super low carb have the opposite problem – very little appetite. I’d guess the wine is to blame. π

Hi, just getting started with the low carb. Been off soda and bread except for a roll last night and doing pretty good when I had to travel to office this week. Took brocolli and peppers and some dip and tuna with lettuce for roll ups. Had almonds as my snack. I have not gotten in hardly any cardo this week and I have a sedentary job, but I do feel better. I haven’t been hungry I guess because the protein fills you up. But I am craving the sweets and that’s hard. I did a few strawberries and whipped cream last night. Doing good on my water intake. And desperately hoping this will get some of my weight off. I’m not terribly heavy, but i’m 57 and at 163 right now when I should be at no more than 135. Thanks for the support. Love your top!!!

Congrats on taking control of your health. That’s a HUGE step. It sounds like you’re doing really great so far. I’m in the same boat with you now that I’ve lost the bulk of my extra weight. I’m 5’5″ and as of this morning: 152.2 pounds. I’m maybe 10 pounds away from goal, outside of toning.
The last 20’ish pounds are the most challenging! Keep that in mind, and don’t compare yourself to others – because that will get discouraging. People that have more weight to lose, will lose faster, for obvious reasons.
