If you’ve been following along, you know I’m doing the 3 Ingredients Rule for a 2-week “KISS” challenge (meaning: keeping it super simple).
Basically I’m keeping my meals to 3 ingredients or less per plate.
A lot of people in our low carb challenge group are seeing great success with the 3IMAX challenge so far. Especially as a means of breaking weight loss stalls. 🙂 Others were just starting, so it proved to be a NICE kick-start!
We have our final weigh-in on Wednesday July 15th so I’m pushing hard during this final week. I’ve lost 3.2 pounds so far, but my scales haven’t moved in the last 2 days – which is totally normal. The scales won’t move every single day.
Still, those are great results for me because 1) I was already eating low carb (and simple), so it’s not as big a lifestyle change for me. And 2) I’m closer to my goal weight at 154 pounds. And 3) I’m post-hysterectomy. I typically only lose half to one pound a week, or maybe 5 pounds a month.
Day 9 Low Carb Meals & Macros
For breakfast I had 1/3 cup of pecan halves (yes, again! lol) dipped in a Laughing Cow Creamy Swiss Cheese Wedge. The pecans are just easy, and something I always keep on hand for quick snacks or something to eat on the go.
For lunch I had the leftover Spinach Burger I made as an extra the night before. I made the extra burger on purpose, and often – if I do cook – I make enough to enjoy easy meals the next day. You can get the recipe & macros at:

My mega low carb take-out dinner last night was a ridiculously huge ribeye steak, grilled shrimp & steamed veggies. YUM! I ordered the ribeye, added on the shrimp, and as my two sides I got steamed vegetables and fresh strawberries.
I could only eat half of that, lol – it was definitely a two-meal take-away!
I had the fresh strawberries later for dessert, along with 1/4 cup of Daisy Brand cottage cheese:
I only ate 2 of those berries. I saved the other two for breakfast this morning. 🙂
The day ended nicely at 1670 calories, 20 net carbs, 69% fat and 26% protein.

Not bad. 🙂 And I managed to keep each meal at 3 ingredients or less!
Still, almost half my carbs are coming from the coffee creamer and the sugar free chocolate, which is something I need to work on. I’m not against “having your pleasures” of course, and my coffee is definitely MINE.
That said, it would definitely benefit me to lower the amount, so I think my next personal challenge will be to use half as much creamer as usual.
Baby steps. 🙂

So glad to hear I’m not the only one suffering from “the greater creamer debate.” π I know that it’s not a good use of carbs but I look forward to my coffee So. Very. Much.

Me too, Jennifer – it’s a constant “carb spend” issue for me, and one I’ve gotten down to “1 carb per mug” – but I would love to “go black”. π That’s my ultimate goal!
