It’s the end of Day 3 on the 3IMAX Low Carb Challenge, which is a 2-week mini challenge to eat “3 Ingredients Max” at any meal. You can read more about “why 3 ingredients”, and also see some meal examples at that link too.
If you just started eating low carb (or just started back) on July 1st, by now you may be experiencing some weird symptoms, including: headaches, leg cramps, irritability, maybe even a strange taste in your mouth. Don’t worry! This is actually completely normal. It’s often referred to as The Induction Flu. Read WHY here. That will help you understand what your body is going through. 🙂
Through this entire 2-week challenge, I am going to share my own meals & macros with you every day. You can find all 3IMAX posts here. I hope it gives you some ideas for simple (EASY) low carb meals. And of course if it raises any questions, you can leave a comment. I’m happy to help you any way I can!
3IMAX Challenge: Day 3 Low Carb Food Journal
Because I’m also going back through keto flu myself this week (ack! food happens, lol), I have very little appetite. I also took a 4 hour nap today, lol. The irritability will probably hit me tomorrow, yes – on the 4th of July, when I’m supposed to spend the day around people. haha. I should take rum & diet coke along to ease the edge. 🙂
For breakfast I had a sausage & fried egg. This is a “Sausage Egg McMuffin” from McDonald’s, minus the muffin of course. I just order mine “double sausage, double fried egg please” and ditch the muffin. I try not to make it too hard on them, lol.
I could only eat one sausage and one egg.
I told you: NO appetite. 😛
I had the other piece of sausage and egg for lunch.
For dinner I had the other half of my take-out from the night before, or what was left of it: hamburger steak & sauteed spinach. I added a few slices of Colby Jack cheese.
It was dark – sorry for the picture quality. Here was the original meal I had yesterday:
It’s after midnight. I’m up late after that 4 hour nap (!!).
So far my macros are 8 net carbs and 1,022 calories, and 70/27/3:
I am planning to have a healthy snack before I go to bed. I’ll have 1/3 cup pecan halves dipped in a Laughing Cow Creamy Swiss cheese wedge.
I went ahead and added that to my Food Diary in MyFitnessPal. And so, in FULL disclosure 🙂 here is my complete MFP Food Diary for today (Friday, July 3rd):
That’s 12 net carbs, 1402 calories, 75% fat / 22% protein / 3% carbs.
My goals are 20 net carbs a day (max!), with at least 70% of my daily calories in healthy fats. Ideally 75% fat, 20% protein. My numbers are never exact, which is okay. I do shoot for a minimum of 70% fat.
Yes I drank a lot of coffee. Yes, I had two pieces of Atkins chocolate. I was also 2.2 pounds lighter this morning after only 2 full days of the KISS 3IMX Challenge. 🙂

See you there! 🙂

I’m really glad, Yoli!
I look forward to seeing what fun foods end up on my plate today. π

Just curious, why does your daily goal of carbs say 150? I have mine at 15, or 5%.
Lacey Fox says
I am wondering the same thing.
Lynn Terry says
I have my goals set at 75 / 20 / 5 so I don’t know why or when that happened. I have noticed that sometimes MFP jumps around on you. I don’t really pay any attention to those things – and just focus on staying at or under 20 net carbs, and watching my fat/protein ratio on the graph. π

Thanks! Just wanted to make sure I was doing it right. I have been doing low carb for a while, but feel I’ll do better actually tracking my daily intake. I have ordered some of the low carb bread from Netrition and really like it! When you are not on the 3 ingredient phase, how often do you eat the bread and do you see any weight stalls if eating lets say once every day or so?
Lynn Terry says
Hi Lacey π I love the low carb Everything Bread and Everything Bagels! When I have it, I eat one bagel or two slices a day at the most, so a loaf lasts me a week. I do not stall or gain, or bloat or crave at all with these breads. Yay!

I noticed your eggs say no carbs. When I put in fried eggs it puts 2 carbs, so when I eat 3 eggs in a day that’s 6 carbs plus my avocado at 9 carbs – this is why I have trouble sticking to 20 carbs in a day I think.
Lynn Terry says
One egg is .6 carbs. One egg will generally come up as 0 since it’s less than 1. Two eggs should come up as 1 net carb.
I always double check my entries. Once you select the correct item & nutrition data, it’s then in your own list to use over and over again. So it becomes much easier over time as you build up your own database of staples. π
Use this site to look up your avocado type & amount: http://ndb.nal.usda.gov/ndb/search and be sure to note both the carbs and the fiber, as you subtract the fiber to get your Net Carb count.
The last time I looked, Atkins website had Avocados (1/2 whole raw) as 1.8 net carbs. So it’s just a matter of selecting accurate entries from the database.

Thank you for posting your meals as it is helping me learn how to plan out my meals thanks again…

You’re welcome, Cheryl! π
Kelly says
just curious since I am new to this site and about to begin my journey of low carb .. Are you using myfitness pal to log? and if so how do you get the net carb column.
Thank you
Kelly
Lynn Terry says
Hi Kelly π
I am using MyFitnessPal yes, and this is the “hack” I installed for that: http://www.travelinglowcarb.com/4448/myfitnesspal-hack/
