It’s been a few days since my last update, so I wanted to share what I’ve been eating for the last two days – plus my MyFitnessPal logs so you can see ideas & examples.
I also want to say THANK YOU for the awesome discussion on Mindset, Motivation & Goals last weekend… I’m back in a groove, on a roll, and feeling fabulous!!:)
That said, this week has been SUPER busy because I’ve been crazy focused on my goals and blasting through projects – so I’ve been eating super simple & easy low carb meals, that are also delicious.:)

In my last low carb food diary I shared Saturday’s meals & macros, so I have some catching up to do. For now, here’s what I’ve had hte last two days – on Wednesday and Thursday:
Thursday’s Low Carb Meals
Work started early and my schedule was full, so I made an easy low carb breakfast with simple whole foods:
1/4 cup Daisy brand cottage cheese, 18 grams of blueberries and 30 grams of pecan halves. I mixed it all together like cereal.:)
I had a “working lunch” so I grabbed a quick high fat calorie-dense snack: a serving of Pili Nuts and colby jack cheese off the block.
By the time I sat down for dinner it was late, and I was famished! 😛
I ordered deliver from a local bistro: a half pound hamburger steak with sauteed vegetables – plus a side caesar salad without the croutons (with ranch dressing instead).
This normally ends up being to meals for me, but I finished it ALL – except for maybe half the romaine lettuce. Because as I was eating the first half of it, all I could think about was the ecoli romaine recall, lol.
Thursday’s MyFitnessPal Food Diary
1789 calories, 15 net carbs, 82% fat, 61 grams of protein
48 ounces of water, 4 mugs of coffee
Wednesday’s Low Carb Meals
I had an amazingly delicious breakfast on Wednesday morning. I basically just threw together several of my favorite low carb foods on one plate so I could get straight to work…
It’s cream cheese, pecan halves, peanut butter, strawberries & blueberries.
Then I topped it all with a ChocZero white chocolate dipping cup. 🙂

I ate that breakfast throughout the morning and into lunch at my desk while I was working, then had a late lunch / early dinner as my second and only other meal on Wednesday.
I made sausage & cheesy scrambled eggs:
This is the Smithfield brand sausage I told you about in my last food diary that’s zero carbs and the fewest ingredients I’ve EVER seen in any sausage. It’s also frozen, so super convenient for quick low carb meals. 😉

1527 calories, 13 net carbs, 85% fat, 41 grams of protein

It looks like the rain is finally going to let up here in Tennessee and give us a few pretty days to enjoy! I’m anxious to get out for a few good walks with Slim this weekend (my great dane), and if all goes well with work projects… get in a good hike too. 🙂

I love all your ideas, but I cant pay $30 for 10 cookies! Really thats crazy. Cant they lower there prices?? Most people cant afford those prices. Low carb and gluten free foods are outrageous in price. Just not fairβ€

Hi Deb! Actually it’s 20 cookies – it’s 10 packs of two. That’s still not “cheap” but better than you thought at least. π I don’t eat these as cookies or snacks, by the way – but usually make a meal out of them. And of course don’t eat them daily – so that makes it worth having them as a treat.
For example I’ll top them with kosher cream cheese (lower in carbs) and sliced strawberries & blueberries – and have them for breakfast. Which is absolutely delicious! Or put peanut butter (or cream cheese) between them for a quick “cookie sandwich” that will hold you over for a nice while. π
