Some people say that weekends are the hardest for them to stay on track with their healthy eating and low carb macros, so I thought I’d check in… and see how your weekend is going? 🙂
I’ve had a GREAT week and am even back to doing my daily Tricep Dips, which makes me super happy!
Which is all because I could NOT open my jar of Pili Nut Butter last week, which did NOT make me happy. 😛 lol

My Low Carb Meals This Week
This week I made my low carb spinach biscuits which just use a few simple ingredients but come out GREAT. 🙂 I really love easy low carb recipes, especially for quick breads like my low carb biscuits.
I only made half a batch of the spinach biscuits and I added a little shredded cheddar because I was short on parmesan.
I was also out of parchment paper which is what I normally use, but I had some non-stick foil – both are great for quick cleanup and no sticking.;)
Those made for a delicious sandwich. 🙂
I used Oscar Mayer Deli-Style Rotisserie Chicken slices and Duke’s mayo:
I had some great take-out this week too…
Including the Roast Chicken Bites Salad from Bojangles’.
It’s 14 net carbs for the entire salad, and 2 net carbs for their ranch packet.
Another great low carb take-out meal was this Grilled Chicken Taco Salad – minus the taco 🙂 – from a Mexican Restaurant.
I ordered it with avocado slices instead of guacamole, mostly out of personal preference but also because I have no idea what they put in their guac.
Several people asked me how I track restaurant meals. If it’s not something on the menu, where I can look up the nutrition facts online to log it, I just log the individual foods in my meal – based on how much I eat, like this:
I couldn’t finish the whole taco salad so I had the rest of it – mostly chicken, avocado & cheese – the next day as leftovers:

Aaron and I had them plain one morning with coffee, and we both LOVED them. They are the closest thing to a traditional peanut butter cookie I’ve ever had – very soft and buttery and crumbly. 🙂

Other low carb breakfasts I’ve had this week include my usuals – like cheesy eggs. This is 4 eggs scrambled in real butter with colby jack cheese:
And my favorite “low carb cereal” breakfast: 1/2 cup of pecan pieces, 1/4 cup 4% Daisy brand cottage cheese and 4 small diced strawberries:
This was a very easy low carb dinner…
I had some steamed spinach left over from making the spinach biscuits, and some Tyson Grilled & Ready Chicken Fajita Strips. I tossed both in a skillet with some butter and fried those together – then drizzled Alfredo Sauce over it:
I used Pictsweet frozen sliced yellow squash and lined it on a baking sheet with olive oil and salt and cooked those in the oven to go with the chicken & spinach:
I made a delicious dessert using ChocZero Dipping Cups.
I love those things!!
I added half a TBSP of Pili Nut Butter to each White Chocolate Dipping Cup, plus half a serving of macadamia nuts. Then I topped each one (I made two) with another TBSP of Pili Nut Butter (half a TBSP on each):
You can get the Pili Nut Butter here. I like Almond Butter better or natural peanut butter better, but the Pili Nuts are amazing. My favorite low carb nut!!
The ChocZero dipping cups make the best “keto candy” ever!
Some people call these Fat Bombs, but I love that you can use the cups as candy molds to make individual candies instead of making up a whole batch of something. Which is great for portion control. 😉

I used the Dark Chocolate ChocZero Dipping Cup on the Keto Kookie dessert above too. ChocZero makes chocolate syrup, and I have some to try, but I love how the dipping cup chocolate sets up kind of like Magic Shell. 🙂
Aaron loved that ^ and also the “Turkey Sandwiches.” 🙂
That was my favorite meal of the week too, so I’ll probably make more of the Spinach Biscuits this week. They’re great straight out of the oven too, or topped with a fried egg – so they work well for dinner OR breakfast.

Your ChocZero dipping cup treats ALWAYS look delicious! After you make them & set them in the freezer, do you store them in the fridge or keep them in the freezer until youβre ready to eat them?

I only make how many I want so I don’t actually store them, lol – I eat them! π But yes, in the past when I’ve made up several (for pictures here) I do keep them in the freezer. Then just take them out and enjoy them, straight out of the freezer!

Hi Lynn,
Iβve got a slow cooker for Christmas and used it this past two weekends. The first time I made pulled pork which was delicious. Just a pork shoulder rubbed in liquid smoke and pink salt and set it on low for 8 hrs. It was great on salads.
This week Iβve tried Mississippi pot roast. It was delicious on its own but again I put it on lettuce but I think it would also be good topped with two fried eggs and a dap of ketchup as a hearty breakfast. I wonβt be be able to find the breakfast one out until next weekend because my carbivore family ate it all π

3lb chuck roast
Ranch dressing packet
Au jas gravy packet
6 tb of butter
Pepperoncini peppers 5-10
Cook on low for 8hrs or high on 5hrs
