In my last food diary, I shared all of my low carb meals for Thursday & Friday. Here is what I’ve eaten since then, plus my MyFitnesspal diaries so you can see how I logged my meals…
Saturday’s Low Carb Meals
On Saturday I had my favorite “cereal” for breakfast with pecans, cottage cheese & strawberries. Then while I was out I grabbed sausage & fried eggs from McDonald’s for a quick lunch.
Dinner was a simple bacon & eggs, with the eggs scrambled w/cheese:

Sunday’s Low Carb Meals
On Sunday morning I decided to make a fancy breakfast. 🙂
I took two Low Carb Cocoa Crepes from Know Foods and fried them in butter, then topped them with cream cheese and strawberries.
Then I added pecan pieces and drizzled it all with a TBSP of melted peanut butter – which made for a DELICIOUS “breakfast dessert.” 🙂
The crepes are good, but I make my own low carb crepes at home too – and I made those the next day so I’ll share that recipe with you in a second.
I made two meals out of the crepes because that was A LOT of food, then had a big plate of cheesy eggs for dinner that night:

Monday’s Low Carb Meals
I got up on Monday and made my own Low Carb Blueberry Pecan Crepes Recipe, and also made 4 strips of bacon in the oven – I just baked those at 400 degrees.
I wrapped the bacon in the crepes and ate them like bacon sandwiches. 🙂 That was a nice soft & crunchy, sweet & salty combo! The crepes recipe makes two servings, plus I had 4 slices of bacon, so I made breakfast and lunch out of that.
It’s just 2 eggs and 2 ounces of cream cheese blended together with a hand mixer and fried in real butter. You can add whatever you want to them, or make them plain and top them with sugar free syrup if you prefer.
I had to work until 8pm on Monday, so for dinner Aaron brought me take-out from Applebee’s.
I had the Fiesta Lime Chicken (“no rice and no tortilla strips, please”) with broccoli as the side. It’s on their 2-for-$20 menu which comes with an appetizer, so we got 2 side salads as one of the appetizer options. Mine was a caesar salad with no croutons.
I couldn’t finish ALL of my dinner, but I did eat most of it…

Tuesday’s Low Carb Meals
I’ve been wanting to try the Good Dee’s new low carb pancake mix, so that’s what I had on Tuesday morning, along with the sugar free syrup from Know Foods – which is zero net carbs (and delicious!).
I’ve had GREAT experiences with Good Dee’s Mixes so far. You can see my experiments with her mixes here. They’re so versatile and fun to get creative with!
And the pancake mix was not a disappointment. 😉
They cooked up thick and fluffy!
I haven’t tried the pancake mix from Know Foods yet, but Good Dee’s Mix definitely rivals my all-time favorite pancake mix! They were absolutely PERFECT, fluffy and delicious:
I’ll have to get more of the New Hope Mills mix, get some of the Know Foods pancake mix, and more of Good Dee’s – and just have a pancake party for a true comparison. 🙂

Aaron loves her mixes, so he made the pancakes – and he made them HUGE, lol. So that was a BIG meal for me, that I made two meals out of.
Then I just snacked on a slice of colby jack cheese and some pecan halves in the afternoon:
For dinner I finished my leftovers from Applebee’s, and added Pili Nuts to what was left of the caesar salad for a nice buttery crunch – and to turn my little bit of leftovers into more of a meal. 😉
I like raw pecans in caesar salad too. 🙂
Tuesday’s MyFitnessPal Diary & Macros
15 net carbs, 2092 calories, 87% fat
I’m sticking to my exercise goals! 🙂
I’ve been getting out walking with Slim, and testing new harnesses and leads for him – for more adventurous walks & hikes together.
As you can see it’s pretty easy to stay below 20 net carbs a day, and get at least 70% of your calories in fat. That’s four straight days of Ideal LCHF/Keto Macros to give you some ideas.
The crepes recipe I shared with you is really good and so easy to make. And they reheat well. Sometimes I pop the leftover crepes in the toaster, sometimes I just throw them back in the skillet to warm them up on each side.
My weight is continuing to drop. I weighed in at 141 pounds this morning. I’m less interested in the number on the scales though, and focusing more on my full body composition and my body measurements… so we’ll talk more about that in my next post. 🙂
