I’m in a mood. 😐 🙄 I don’t feel like eating, or exercising, or even working.
Of course I’m a responsible adult so I’m doing all of those things anyway. 😛 Just forcing myself through the motions, really.
You know why?
Two words: Keto Flu.
Those questionable foods on the Chinese Buffet last Sunday no doubt. 😉
Ugh, I forgot how miserable that is, and how b*tchy it makes me. 🙄 lol, rah!
I know doing NOTHING just makes me feel WORSE, so I just got up and did 15 Tricep Dips. That helped. 🙂 That plus powering through the day, and the tasks for the day – because a sense of accomplishment does me wonders!
I also forced myself to get outdoors on Tuesday while it was nice and get some exercise. I’ll show you a couple of videos in a minute. 🙂
First though, my low carb meals and MyFitnessPal diaries for the last two days, so you can see what I’ve been eating and how I logged it…
Tuesday’s Low Carb Meals
I got up around 4am on Tuesday to finish up my work early so I could get outdoors for the afternoon. I had A LOT of leftover noodles, because that little bag of low carb pasta I cooked on Monday made A LOT -lol.
I decided to make (low carb) “mac & cheese” for breakfast.
As crazy as that might seem, it just sounded good. I added some butter & cheese to the leftover noodles & popped it in the oven:
I probably could/should have done that in the microwave, but I love “baked cheese” and the crispy bits were yummy. 🙂
That made for a delicious and VERY filling breakfast!
I finished up my work, saddled up my great dane (lol!) and headed out after lunch toward the river.
I stopped for lunch on the way, and got sausage & fried eggs from McDonald’s.
I love that they serve All Day Breakfast now. 🙂
Slim and I played outside for a few hours in the woods and at the river (I’ll show you some fun videos in a sec!) so were were wiped out when we got in.
I grabbed the easiest thing I could make a quick meal out of…
Philadelphia cream cheese – and this is the one that is lower in carbs like the Kosher version – and a Double Chocolate KNOW Cookie (4 net carbs):
I warmed it up in the microwave a bit, which makes it SO good!
And when you warm up cream cheese it gets creamy and fluffy. 🙂

Wednesday’s Low Carb Meals
On Wednesday morning I had a REAL bowl of cereal and milk!! 🙂 🙂
Low carb of course, but gosh it’s been ages since I’ve had anything even resembling a bowl of cereal…
This was SO delicious. 🙂
I used Chunky Musli Swedish Cereal and Milkadamia Macamedia Milk:
For lunch I decided to have another serving of the Low Carb Pasta (it’s the Penne version).
I cooked up 3 ounces of Tyson Grilled & Ready chicken in a pat of butter, warmed up the noodles with some cream cheese, and topped it all with 2 TBSP of chunky salsa:
It was REALLY good. I mixed it all up together, and it tasted more like “pizza” for some reason. Delicious & very filling!
The thing that would have made it better: roasted broccoli or asparagus.;)
The cereal I had for breakfast was so good… I decided to have it again for dinner. 🙂 Plus it was SO low in carbs, which helped after the higher carb pasta!

Slim and I had a GREAT time romping around at the sandbar down by the river, and exploring through the woods. 🙂
And guess what I found??
The top of the waterfall I hiked to last Fall. 🙂
That’s the Caney Fork River Gorge down below, the one I scaled (like a crazy woman, lol) to see this waterfall from the bottom.;)
I still have a serving of that pasta left. I should NOT have cooked the entire bag, lol. It made A LOT of noodles. 😛 I’ll probably eat it for breakfast tomorrow and finish it off.
I had a lot of mixed feelings in the woods on Tuesday…
I’m still trying to figure out how to put those thoughts and feelings into words, and share that “why I quit hiking” and “why I’m getting back to hiking” post I promised you. 😉
I’m working on that, so stay tuned…
