I’m heading off on a 3-day weekend road trip, and really looking forward to some great exercise – and FUN low carb meals along the way. 🙂

I’ll be taking some low carb foods & snacks with me as usual, including ChocZero Dipping Cups and the low carb KNOW Cookies – because I just got my order today, in the best of timing!

Here’s what I’ve been eating the last few days, complete with my MyFitnessPal food diaries so you can see how my macros worked out…
My Low Carb Meals on Tuesday
Breakfast on Tuesday morning was my usual favorite “cheesy eggs” – 4 eggs scrambled in real butter with colby jack cheese cubed off the block, plus a tablespoon of chunky salsa. 🙂
That actually made two meals for me, and I didn’t have much of an appetite on Tuesday for some reason – so I ate smaller meals, and made two meals out of my late lunch/early dinner too.
My second meal was my favorite “low carb cereal” made with 1/2 cup pecans, 1/4 cup Daisy Brand cottage cheese and 4 small diced strawberries:

My Low Carb Meals on Wednesday
I was out & about on Wednesday so I stopped and got sausage & eggs from McDonald’s for a quick low carb breakfast.
I just say, “3 sausage patties and 3 round fried eggs please.” Their sausage patties are 1 carb each, btw – and I couldn’t eat all of that so I saved one of each for later in the day. 😉
For a late lunch I had a different version of low carb cereal with pecans, cottage cheese and the KZ Chunky Musli. 🙂 YUM!!
Aaron came over for dinner and we got low carb take-out from Applebee’s via the 2-for-$20 menu. That’s SUCH a good deal for two full meals and an appetizer for only $20, and one of the appetizer options is two side salads. 🙂
We got the Bourbon Street Chicken & Shrimp with steamed broccoli instead of potatoes, and a side salad:
I couldn’t finish it all, and saved the salad for the next day…

That Chunky Musli cereal was SO good that I had it again for breakfast today. 🙂
Then for dinner tonight I had half a hamburger steak.
And for lunch, my Applebee’s salad… topped with Turmeric & Black Pepper Pili Nuts. 🙂

I cannot wait to get on the road and spend the weekend with my daughter. I’m also going to see my favorite band, and plan to hit 10,000 steps dancing the night away – and taking a much needed break. 😉
