I just got home from a quick “low carb road trip” to Johnson City TN, Asheville NC and back – with super easy low carb eats along the way.
Including low carb sushi! 🙂
I tried something new too, just to see how well it would fair “on the go” that I’m REALLY excited to share with you!
And tonight I made a really good low carb dinner at home, quick & easy even, so I’ll share that with you too…
Easy Low Carb Meals & New LCHF Food Ideas
I left out on Thursday afternoon and got home super early Saturday morning, so it was a whirlwind road trip with a LOT of time in the car.
Before I left though, I decided to make some low carb candy I’ve been wanting to test – specifically to see if it would “make it” on a road trip or while traveling. So that’s what I did: I made it up (super quick & easy!) and took it with me on this trip:

Here’s the two candies I made as a “test” and they both literally took only minutes to make! They turned out BEAUTIFUL too:
The test was: would they hold up on a 4 hour drive in 73 degree humid Tennessee weather, and still be good when I got where I was going? The answer: YES! 🙂
I put them in the freezer when I arrived, then ate them the next day – and they looked exactly the same (even after the road trip!) as they did above. 🙂 Perfect!
I’ll have to give you the full recipe for both, and a few more “candy creations” that I am testing out this week, so stay tuned for that. But I used ChocZero Dipping Cups to make them. 😉 Those things are SO awesome!!

I stopped at a McDonald’s on the way for wi-fi and coffee, to catch up on some work real quick, and had a simple low carb dinner there – thanks to their All Day Breakfast menu.:)
I couldn’t eat all four pieces of sausage and eggs, and I knew that when I ordered it – but I took the leftovers with me and ate those the next day.
For lunch on Friday I was in downtown Asheville, NC and went to the Wasabi Japanese Steakhouse on Broad Street.
I ordered two sushi rolls, both low carb. The first was the Summer Roll which is a “naruto roll” (a sushi roll with no rice) and I said “no sauce, add cream cheese) – because the sauce that came on top of it was a sweet sauce of some kind.
The Summer Roll had salmon, crab, tuna & avocado + cream cheese.
I also ordered the Spicy Salmon Roll and said, “cream cheese instead of rice please.” No problem! It was 50 cents extra to add cream cheese to a roll, so $1 extra for both rolls. Not bad. 😉
Other than my low carb sushi lunch, I had sausage & eggs for both lunch & dinner. Then I ended up driving back in the middle of the night Friday night.
I made one stop on the drive home, at a Pilot Travel Center – for gas & coffee.
I was getting hungry though and only had a pack of almonds on me, so I also grabbed some water and discovered a few flavors of Quest Nutrition bars there! I picked up a couple of those for the drive home…
I ended up eating the Raspberry White Chocolate Bar (eh, it was okay) with my pack of almonds and a bottled water. So I still have the other Quest bar.
I made eggs for breakfast this morning, which was more of a very late breakfast / early lunch, so I wanted something GOOD for dinner.
That’s when I remembered I had the KNOW Low Carb Wraps in the refrigerator! 🙂
I made this beautiful Tuna Melt with them:

I like the bars, which are very bread-like, and the wraps are a new favorite now too. Nobody seems to like the Lemon Cookies, but the other 3 flavors of low carb cookies are a BIG hit – and personally, my favorite product for the carb count & size. I say that because the donuts & muffins etc are much smaller so the carbs could really add up on you with those! Their sugar free syrup is GREAT too. 😉

How do you make your tuna melt?
I ordered the cookies from KNOW and I LOVE them! I ate half of a cookie fresh and put the other half in the fridge. When I ate the second half of the Double Chocolate Cookie I heated it a few seconds in the microwave. Oh my goodness….it tasted fresh baked!
I ordered 5 boxes so I could share with my daughter(got 1 cinnamon, 1 chocolate chip and 3 double chocolate). Do you refrigerate yours or freeze them? Mine are all in the fridge but wondered if I should freeze them?

Hi Kathy π I love (LOVE!) those Know Cookies! I keep mine in the refrigerator and they keep just fine. If I were going to store them longer than a few weeks I would freeze them, but otherwise they do fine refrigerated.

For the Tuna Melt I put a full tbsp of butter in a non stick skillet over medium heat, and toasted the wraps in the melted butter. I added shredded cheddar, my tuna salad: 1 can of tuna, 2 tbsp of the creamy spinach dip and some diced dill pickle.
I made two wraps for that much tuna salad. It was delicious! π

I tried my chocolate chip first. To me… itβs like a mix between soft cookie and chocolate chip bread. I can taste a little coconut which I love! I would like to saw it was so big I couldnβt finish it all (it is BIG)…. but the whole reason Iβm switching low carb is because this girl can eat!! So I gobbled it down with no problem! Delish!
I spent all night working our consession stand at our haunt so I was surrounding by popcorn and cotton candy. I held out for my KNOW cookie and am so glad I did. It was awesome and I feel good about my choices tonight.

I have been eating the Quest bars again as a meal replacement when i am on the run. I like the Smores flavor and the rocky road Cinnamon
bun. Flavors Ok i do not love love them but it is not bad and it is filling with a cup of coffee. π

Thatβs how I feel about them also. They arenβt the best… but not the worst either. The Quest Hero bars are really good though.
Also… you can cut your quest bar into 8 small chunk and put them in a preheated oven for 3 minutes, pull out, smash down, and 3 more minutes and they are little fresh baked cookies. They taste better that way!

I found in the past that the Quest Bars stalled my weight loss so I stopped eating them. But I did grab these in a pinch when nothing else was open and I needed a quick bite to eat. I forgot how SWEET they are. π Ack!
I’ve heard a lot of people say the Quest Hero bars are MUCH better. I may give those a try, but my favorites are the Keto Brownie nutrition Bar and the Sticky Bars, which have much better ingredients. π

You will definitely think they hero bars are too sweet… but the taste and texture is much better than there too sweet original. In my opinion anyway.
Iβm loving these KNOW cookies! Cookie for breakfast… donβt mind if I do!

The KNOW Foods products are NOT stalling my weight loss, btw – which was a big plus. π As for the bars, everyone is different with those, and with different bars, so you just have to test…

Have you tried the brand, Enlightened Ice Cream. I was looking for Halo Top and found that and saw it only had 2 net carbs per 1/2 cup i believe and is sweetened with Erythritol and monk fruit. And has 0 impact on blood sugar. AND IT TASTES GOOD. I got the Chocolate. Just like Halo Top, it taste better if left to thaw a bit. It comes in pints like Halo Top and the challenging part is to not eat the whole darn pint. Lol.
I was so excited that i found this. It has 0 sugars unlike Halo top which does actually contain sugar. π
I bought it at a store close by me called Dierbergs
It costs the same as Halo Top. It did not come in a lot of flavors but you cannot go wrong with chocolate. π

I haven’t tried that one yet, Gina – I’ll have to look for it. I find that if I have it in the freezer… I tend to eat it (lol, duh!). And YES, it’s hard to stick to a single serving. π I do love all the flavors and variety with HaloTop, and love that it doesn’t stall my weight loss. As long as I have room for it in my carb count for the day, that is.;)

I love the Quest chocolate chip cookie dough bars when I am traveling as they have 14 grams of fiber.. I aim for 25 -30 grams fiber per day, these bars help me achieve that daily goal in order to stave off diverticulitis, an all too common problem associated with low fiber diets.

Yes, i like the Quest bars for the fiber as well. Also the bars are high in protein. The fiber slows the absorption of carbs so that is an added benefit as well
I tried the Quest bars over three years ago and i have to say they have improved the texture and flavor of the bars
Again, i do not love them but the Quest Bars are great if you are on the go and cannot sit and have a meal.
I rather make a meal out of the Know cookies or almond biscuits etc but the Quest bars are good in a pinch.
I found that any food high in protein and low carb satisfies me longer to wardboff hunger. π

It would be nice if you could get some high fiber green vegetables in a gas station at 1am, or if it were easy to eat them while traveling -lol. π

This isnβt really in regards to this post, but i wanted to ask you a question, if you don’t mind.
Have you experienced hair loss since eating low carb? The reason I ask is because I read on a low carb Facebook page that some of the women on there experienced extreme amounts of hair loss, and to be honest, itβs totally freaked me out. Iβve always had very fine, thin hair, and not a lot of it, so Iβm terrified to lose a lot of it. On the flip side, i know that i feel better and lose weight quickly eating low carb. Iβve sort-of been on βpauseβ since hearing about the possibility of losing my hair.

Hair Loss is a result of rapid weight loss, not necessarily eating low carb or keto. It’s also temporary. My advice: eat real food, with plenty of healthy fats and green veggies and whole meats – and don’t try any “keto fad diets” like egg fasts or whatever. Just let your weight come off naturally.
You can also take Biotin or Hair Skin & Nails. But if you experience hair loss, it is temporary.

I had the wraps and toasted them in a pan and made a cheese quesadilla. They were good. I had a friend and one of her daughter’s try the wrap plain, as is and they were like nope and spit it out. Ha! I will def fry in butter this week and add some canned chicken. I used to love tuna but it doesn’t sound good to me.
As for the KNOW cookies, I only like the double chocolate and wish I would have bought 2 boxes of those instead of the Chocolate chip. At least I have one granddaughter that likes the choc chip and another that likes the cinnamon. Goes to show how everyone’s taste buds are different.

Yes, I don’t recommend those products. It’s easy enough to get into ketosis naturally by eating real food. Save your money for pecans and low carb cookies & ice cream. π lol

The first time I ate one I was able to finish it no problem… I was excited about cookies! The second and third one though I had to save the rest because it was A LOT of food. Which is so funny because I can eat like 27 oreos in one sitting lol. Definitely the fact they are real food and not junk play a huge role in them. I canβt decide which one I like more double chocolate or chocolate chip. I took the suggestion of another reader and microwave mine for about 25-30 seconds before eating. YUM!
