Yesterday I got in a good home workout for gluteus & arms, and today I’m off for an adventurous hike!
I’m in middle Tennessee which means I’m in the totality zone for the solar eclipse today, so I thought I’d hike through a river to the PERFECT spot to enjoy it. 🙂
Before I head out, I wanted to share my low carb food diaries with you from the past week, since my last 2 Day Food Diary I shared on Tuesday…
My Low Carb Meals on Wednesday
For breakfast I had a delicious Keto Brownie with raw pecan halves. I got this in one of my recent keto boxes, and it’s SO delicious!!

For lunch I had my leftovers from dinner out at O’Charley’s the night before. It was salmon on a bit of caesar salad with steamed broccoli:
My dinner was take-out: smothered grilled chicken and steamed broccoli with a garden salad from Applebee’s Carside-to-Go. This is the Fiesta Lime Chicken with no tortilla strips and no rice, with broccoli instead.
Delicious! I couldn’t eat it all, so I logged what I did eat…

My Low Carb Meals on Thursday
For breakfast I had my favorite “low carb cereal” of pecan pieces (60 grams/half cup), 1/4 cup Daisy brand cottage cheese and 4 small strawberries:
I ate my leftover chicken & broccoli for lunch, from Applebee’s the night before:
And for dinner I finished the side salad and added 2 servings of Spicy Chili Pili Nuts to it, to make it a filling meal. 🙂 (We have a coupon code for those too: LOWCARBTRAVELER)
I also ate the BHU Primal Salted Caramel Pecan Bar I got in The Keto Box earlier this week. That was DELICIOUS! Very tasty, with a nice chewy texture and the crunch of real pecans. Yum!

My Low Carb Meals on Friday
For breakfast I had an easy combination of kosher cream cheese, fresh strawberries & raw pecan halves:
I made tuna salad for lunch with: tuna, mayo, mustard & dill relish (simple!) and had that with the Spinach Biscuits I had made up in the refrigerator:

I also ate the LOCA Chocolate Chip Low Carb Cookie I got in my Keto Krate the other day.
It was VERY crumbly, but really good – although it did have that “cooling effect” from the erythritol and a slight aftertaste. But definitely a very “real like” cookie!

On Saturday I had my favorite “low carb cereal”… twice, lol.
I ate it for both breakfast AND dinner.

I didn’t eat much on Sunday… but the huge platter of “bacon, egg & cheese scramble” I made actually ended up being two meals for me.

My goal: 20 net carbs max, 70% fat minimum – and as little cooking as I can get away with! 🙂 lol…
Oh, and I got another fun package in the mail this week.
I ordered the KZ Chunky Musli again. 🙂 This stuff is amazing!! You can eat it like cereal, or I really love to make a Trail Mix with it.
I’m off to get some exercise and experience the solar eclipse. 🙂
My goal today: SWEAT!

Hi Lynn,
This is my first time writing to you. I did low carb for awhile and lost 40lbs but have gotten off of it recently and i’m having problems getting back into it. I’ve been following you for several months and I finally signed up to receive the keto crate starting next month. I’m very excited about that.
In looking at what you eat in a day it really doesn’t look like you eat much. How do you keep from being hungry? Maybe it’s because I’m not used to eating the way you do but I think I would be starving on what you eat in a day. Do you have any tips, suggestions, words of wisdom?

Do you mean calorie-wise or portion-wise? One thing is that being in ketosis for so long, you have MUCH less appetite. I eat WAY less than I did before I went low carb – so there’s that.
Also, I tend to eat smaller meals more frequently, spread out through the day. So the huge plate of bacon, eggs & cheese I made – was two very filling meals for me.
Other than Sunday, the other four days I had 1600-1800 calories a day, so I’m definitely getting plenty and not going hungry. π Although being in Middle Tennessee yourself, you know how HOT it’s been here… which plays a part in my appetite too. It’s just too hot to eat heavy. π

You’ll also notice I eat 70-80% fat, and eating high fat tends to satisfy you quicker and longer. π

I was referring to portion size. I’m sure it’s what you get used to and I know if I could just buckle down and get myself back into ketosis I probably wouldn’t feel so hungry.
I really enjoy that your food is simple and not a bunch of crazy ingredients that’s difficult to find. Thank you for your response.

Yes, definitely. I used to eat HUGE portions, but eating low carb is a natural appetite suppressant and you’ll find you eat MUCH less – and get full quicker. π
I also haven’t had much of an appetite lately. I keep thinking it’s because of the heat and my allergies, but I’m also feeling a little down too – so that may be part of it.
Still, I’m getting plenty of calories and trying to eat smart (good quality food choices), so I tend to just listen to my body and eat when I’m hungry – and not force it.
Simple is good! π I like easy, and also – the more simple your meals and food choices, the better. Both for digestion, health AND weight loss.

I have yet to figure out how to get the chart/summary to show up like that in myfitnesspal. I successfully added the fibre to my list and I can go to “nutition” and see my macros or nutrients but it doesn’t factor the fibre in, for example, nor does the chart look like yours. Are you using the upgrade?

It sounds like you are using the mobile version (the app). The plugin doesn’t work on the app, only online in firefox or chrome browsers – so that may be the issue?

I totally get the carbs- fiber equation =<20 carbs per day. But if I am reading the food journal right, the carbs look like they are negative (more fiber grams eaten than carbs). My question is, this is oermissible and won't stall weight loss?

Hmm, I don’t go into the city much (Nashville), but I do love the Ryman Auditorium. Catch a show there if you can! Otherwise downtown is hopping and FULL of fun city life and places to see / things to do. I bet there are some great “things to do” lists on Google!
If you venture outside the city, there are all kinds of beautiful things to see within a 90 minute drive. Burgess Falls is not far off the interstate, and a gorgeous day hike with multiple waterfalls.

I enjoy it most when I’m eating out, at social events, or traveling – simply because there are so many fun new low carb foods and combinations to discover along the way. I see it kind of like a “game” and have FUN with it while I’m out & about. π

My question is …. how does the Keto Brownie above compare? I really really hate cooking. Barely survive making my low-carb sausage biscuits & other simple meal preps. Good question on the Keto Brownie. It’s more of a nutrition bar, while Dee’s mix (easy to cook/make, thankfully! lol) is definitely a “brownie” – a fudgy, fresh baked, dessert.
I love the Keto Brownie bars because they are a great on-the-go snack. Not too sweet, no sugar alcohols, great rich cocoa flavor. And something you can grab & enjoy that actually has good quality ingredients.
I wouldn’t say they compare really. They’re two totally different things. But I do love them both! π

I haven’t seen any info on raw vs roasted nuts in regards to keto. I’ve noticed you eat raw pecans. is there a keto reason you eat raw nuts or do you just prefer the taste? I’m asking because I prefer roasted and I’m worried that I could be sabotaging my progress due to the types of oils used in the rising process? Thanks for all you do!

I love roasted nuts. I buy them that way sometimes, and receive them in my Keto Krate sometimes too – which are great! I’ve even roasted my own in real butter and cinnamon, which tastes delicious.
I don’t think there’s any real difference or any concern.
When you said “sabotaging my progress” though, it made me wonder if you’re not losing weight or having a problem with that? If so, how are you tracking and what are you usual fat/protein macros? Let’s figure out the culprit! π
