My weight has sorta bounced around during this challenge (the last 90 days) but on an overall downward trend at least.
One thing I’ve noticed the last couple of weeks is that while I’m near the same weight I was this time last year… when I put on the same clothes, they don’t fit the same at all.
So I’m a lot leaner than I was, even at close to the same weight. 🙂 That’s the benefit of getting much more active over the last year!
I’m about to REALLY RAMP UP my goals though, so stay tuned – and expect to get seriously challenged with me. 😉
I’ve been eating super easy low carb meals and snacks the last few days, as I’ve been real busy at work and at home. I’m working on some ambitious goals in my career, and also doing A LOT of rearranging around the house too.
I just got a big dose of motivation out of nowhere. 😛 lol
So yeah, I haven’t been wasting any time in the kitchen, but rather making super easy meals between big projects – including eating leftovers from my big cooking craze last week, and enjoying the things I got in my June Keto Krate too.
Here’s a photo tour of my low carb meals the last few days:
This was an easy low carb snack plate of pecan halves, colby jack cheese cubed off the block, green olives – and the Maple Bacon Stick I got in the June Keto Krate box.
That pork stick was really good! It was only 2 carbs, and really tasty.:)
One of my favorite low carb meals over the last week was this Roast Chicken Bites Salad from Bojangles’. I added Cello Whisps to it and also Pili Nuts for a tasty CRUNCH, which really made this salad delicious! 🙂

I’ve been enjoying all the leftovers from the BIG Low Carb Cauliflower Rice & Roasted Veggies meal I made (because I made A LOT of that- lol), plus the delicious batches of Low Carb Blondies & Brownies I cooked up last week. 🙂

Delicious!! And it made for GREAT leftovers to enjoy for a few days. 🙂
The Low Carb Cream Cheese Pecan Blondies were delicious too. YUM. I enjoyed two of those for breakfast the other day with big fresh strawberries:
I also made up a batch of Low Carb Peanut Butter Brownies at the same time too, this time with walnuts instead of pecans:
I’ve finished all the blondies, but I do still have a few of those beautiful brownies left to enjoy this week! 😉
One of my low carb staples when I’m busy – but hungry! – is cheesy eggs.
I usually make 3 or 4 large eggs scrambled in real butter with colby jack cheese (cubed off the block). I use about 1/2 ounce of cheese per egg.
Another one of my favorites is this combination of pecan pieces, Daisy Brand cottage cheese, strawberries & blueberries.
I mix it all together and call it cereal. 🙂
And of course when I’m out & about, my go-to low carb meal is sausage & eggs from McDonald’s. I only order the “round fried eggs” because they’re real eggs cracked on site (vs bagged liquid eggs).
This “4 sausage patties & 4 round fried eggs, please” made two meals for me the other day. There’s no way I could eat ALL of that in one sitting.;)
I got a pack of Chocolate Chip Keto Kookies in the June Keto Krate too, so I used those to make a “LCHF Stack” – which was a big beautiful “dessert meal” lol. YUM! ♥ I added kosher cream cheese, peanut butter & strawberries:

This was my easy, healthy low carb breakfast yesterday morning: cheesy scrambled eggs with sliced fresh strawberries:
I got more Lily’s Sugar Free Chocolate Bars this week too. 🙂 Aaron was up on the mountain and brought some back for me. These are SOOO good!!
I had the Salted Almond & Milk Bar (a serving of it, I mean) yesterday while I was trying out a new Paleo Low Carb Granola that Netrition asked me to review:

My favorite meal of the week, besides the awesome veggie dish & blondies/brownies I cooked myself, was this Spicy Roast Chicken Bites salad from Bojangles’ that I dressed up with parmesan crisps & pili nuts!
