Today is our Week 11 Weigh In, so it’s time to check in and share your total number of pounds and/or inches lost since Monday!;)
I haven’t shared a Daily Food Diary with you lately, so I’ll share a photo tour of some of the low carb foods I’ve been eating lately – both at home and on the go – including fun low carb snacks, low carb fast food and take-out, and what I’ve been cooking up here in my kitchen the last few days. 😉
Creative Low Carb Food Ideas, Fun Snacks & Simple LCHF Meals
My daughter came for a visit and we enjoyed a great take-out dinner from our favorite restaurant: Gondola Pizza & Steak House (Greek/Italian).
I had the Philadelphia Chicken (grilled chicken topped with mushrooms & swiss) with broccoli & cauliflower. She had the Charbroiled Chicken Salad:
I can never finish a full order of their chicken, so I finished the rest for lunch the next day – along with the cherry tomatoes I picked out of her salad. 🙂
I’ve actually had this meal twice in the last week, because it’s so delicious! It also comes with sauteed onions, but I order it without – which is just personal preference, but onions are also higher carb count.
Another great meal I enjoyed recently, and one that has become an EASY favorite, is this Roast Chicken Bites Salad from Bojangles’. The chicken is bit spicy, and the salad is always super fresh!
I added the boiled eggs and Pili Nuts myself at home, which made for a hearty meal. 🙂
Pili Nuts are an amazingly unique nut – big soft & buttery! 🙂
One of my low carb staples is a simple plate of 3 eggs scrambled in real butter with colby jack cheese. Easy & filling!
Sometimes I’ll add something, like a few strawberries on the side:
… or sausage or bacon – or BBQ smoked sausage, made with Guy’s Sugar Free BBQ Sauce:
Another staple in my low carb lifestyle is raw pecan halves. I often grab those to eat at my desk while I’m working, or to eat on the go.
Simple, real food, not messy – very low carb / high fat, and 420 calories for 1/2 cup (60 grams) so they’re both convenient AND filling. 🙂
My all time favorite low carb meal is this combination of healthy real foods that I stir together and call “low carb cereal.” 🙂
It’s 1/2 cup pecan pieces, 1/4 cup Daisy Brand cottage cheese & 4 small strawberries. That comes to 5 net carbs and 85% healthy fat.
Sometimes I’ll add 18 grams of blueberries too, which makes it even better! 🙂
This little beauty is a Bacon Wrapped Filet that comes individually packaged by The Great American Steak Company. They’re great for making a quick meal for one!
I was out & about the other day and grabbed a low carb style Frisco Burger from Hardee’s (known as Carl’s Jr in some areas). They’ll make anything on the menu low carb for you. 🙂 All you have to do is ask for it “low carb style!”
This is such a simple little LCHF I enjoy: cream cheese & peanut butter. It tastes like peanut butter pie. 😉 Just something quick & easy when I need a bite on a busy day!
I also love cream cheese & berries. 🙂
And here are those big beautiful Pili Nuts again!
I’m a big fan of “sweet ‘n salty” combos.;)
Pili Nuts are large, soft and buttery – similar to macadamia nuts but MUCH softer, and zero net carbs! Speaking of, I’d never really eaten macadamia nuts (outside of cookies, that is -lol). They’re delicious too!! Much more “crunch” than a Pili Nut, so a totally different texture.
I picked up a bag of these NOW brand Dry Roasted Macadamia Nuts with Sea Salt recently, and really enjoyed them. ALL of them, lol.
They went GREAT with the Lily’s Sugar Free Coconut Dark Chocolate Bar. 🙂
These are the first two Lily’s Sugar Free Chocolate Bars I’ve tried, and they were SO good! You can get them on Netrition as singles and mix & match all the flavors, or there’s also a variety pack on Amazon (but they’re cheaper on Netrition!).
Sometimes when I’m not in the mood to cook, or busy with work and in a hurry, I’ll just make a plate of whatever I have – which often turns out to be an interesting & delicious LCHF meal. 😉

Another snack I enjoyed with those same foods: peanut butter & chocolate with salted macadamia nuts. Yum! 🙂
Did I mention I ate ALL of those macadamia nuts?! 🙂 haha ~ Another beautiful low carb plate I enjoyed was these NUSH Foods Organic Low Carb Chocolate Cakes stacked with cream cheese & topped with macadamias:
Those are great, but my FAVORITE are the NUSH Banana Walnut Cakes. 😉
I’ve been enjoying a lot of cream cheese lately, because I found a HUGE stock of Philadelphia Kosher Cream Cheese at my local grocery – and the kosher cream cheese is MUCH lower in carbs. 🙂
This is just cream cheese & peanut butter with strawberries & blueberries. Simple, healthy, low carb/high fat… and delicious!
Another easy but VERY filling LCHF snack: pecans dipped in peanut butter. 🙂 Even better: dipped in peanut butter AND chocolate! This is actually Nuti Light Hazelnut Chocolate Spread which is sugar free, thick and delicious.
A recent meal I really enjoyed was from a local place called Stacked Bistro that I discovered delivers in my area!
It’s sandwich shop, but I ordered the Turkey Spinach Wrap with no wrap, with a caesar salad as the side – and just mixed them together into a big hearty salad:
This was take-out from Applebee’s Carside-to-Go…
The American Standard Burger, with green beans instead of fries:
Aaron got the Fiesta Lime Chicken with broccoli instead of rice. Neither of us finished our dinner that night, so I ate the leftovers the next day. 😉
Both meals were on the Applebee’s “2 for $20” menu, which was a great deal!
Another one of my favorites is sausage & eggs from McDonald’s.
I order “3 sausage patties and 3 round fried eggs, please.” Their sausage patties are 1 carb each, and the eggs are “real eggs” cracked on site.
A quick snack plate of Old Wisconsin Beef Bites (1 carb for 6 pieces) with pecans and colby jack cheese, sliced off the block – a quick & easy low carb snack (or for me: a meal).
I also enjoyed the Quest Cinnamon Cereal Bar out of my June Keto Krate box:

I got another box of Smart Cakes recently. They’re like little gluten free cupcakes that come in 3 flavors, and they’re ZERO net carbs. 🙂
I had said before that the chocolate cakes were not my favorite, but this batch was actually better than the last! Still, the coconut Smart Cake is DEFINITELY my favorite of the three. 🙂

Speaking of low carb desserts, we finished off and LOVED this Low Carb Snickerdoodle Strawberry Cream Pie too:
I used Good Dee’s low carb mixes to make that pie crust, and then this weekend I whipped up some awesome desserts with her Brownie and Blondie mixes! I’ll share the recipes with you in my next post, because they turned out FABULOUS. 😉
I have another low carb meal & recipe to share with you this week too, because I whipped up a huge beautiful meal yesterday that included a big pan of roasted vegetables with a shrimp & cauli-rice dish. 😉
Those were frozen vegetables, tossed in olive oil and garlic powder, and just baked crisp at 350. So easy! I prefer to “keep it simple” and just eat whatever I have on hand – or whatever is quick & easy. Which this morning is pecans & string cheese with a big bottle of water… because I have a busy work day. 🙂

Can you explain why the fat is so important in this die?. I need to burn off fat (lose weight) so should I still be eating fat or cut back until I lose weight and am ready for maintenance?

If you eat too lean, you won’t lose weight. So definitely don’t skimp in that area. π

I don’t take any supplements, no. If I get sick, like a stomach flu or have other tummy troubles for some reason (usually only when sick or on meds) I will take a probiotic – but that’s rare, thankfully. π

Lynn, thanks for the photo tour of all of your foods! I am very intrigued by that low carb “Nutella”! I could eat jars of that stuff! LOL!
When I first found your sight about a year and a half ago you used to make a peanut butter fudge with pecans, peanut butter and coconut oil. I have tried it several times and it is amazing! I haven’t seen you feature that recipe in quite awhile. I like to make it and divide it up into several pieces and have it as a snack at night. Just one bite does it for me! I’m sure new folks might enjoy it too. Just make sure to keep it in the freezer now! π

Yes, that hazelnut chocolate spread is yummy – and so versatile! I need to make a batch of peanut butter & chocolate fudge with it for Aaron. π That would make another good recipe post. I have a question. Doing IF does a person gain muscle tone? I hope so. I was thinking I would lose muscle and get flabbier.. π

I don’t personally do IF (intermittent fasting) or any kind of fasting. I simply eat when I’m hungry and don’t when I’m not – and keep it that simple.
You’ll gain muscle through exercise, and burn fat through ketosis. π
