I’ve been feeling very “kitchen inspired” lately. 🙂
This week I whipped up what I decided to call: Snickerdoodle Strawberry Cream Pie with Peanut Butter Coconut Sauce – fancy, hey? 😉
The low carb Walnut Snickerdoodle Pie Crust alone was amazingly delicious!
I used a gluten free, keto friendly, low carb cookie mix for this recipe – but I’ll give you an alternate method as well. I haven’t tested the alternate method, but I’m confident it would turn out pretty good.

For an alternate method using Almond Meal, you could use my low carb cookie recipe as an easy base to create a pie crust.
I used Good Dee’s Low Carb Snickerdoodle Cookie Mix as the base, and added an entire 6 ounce bag of Walnuts (170 grams) to make the crust.
I went by Dee’s recipe for the cookies on the mix, except I used 2 eggs instead of one, and simply crushed the walnuts and added those in:
I baked it at 350 per the instructions on the mix (using a parchment paper lined cake pan) until it looked done: crisp around the edges, and basically a perfect low carb cookie crust. 🙂
You could scoop them out into cookies as well, making delicious Low Carb Walnut Snickerdoodle Cookies – with or without nuts, or whatever nuts you prefer. 🙂
Once it cooled, I cut it into squares and topped it with cream cheese and fresh strawberry slices, then drizzled a peanut butter coconut sauce over the top:
I used my Peanut Butter Fudge Recipe for the “peanut butter coconut sauce.” It’s basically just peanut butter & coconut oil melted together.
While I was mixing up the sauce, I went ahead and made some fudge too. 🙂
Then I layered up more of the snickerdoodle walnut cookies with cream cheese & strawberries with the “fudge sauce” yesterday and just made a meal out of it!

I like it when you are “kitchen inspired”. I made your recipe for spinach biscuits, love them. I’m going to make bigger patties with the dough and use them for burger buns. Keep on keeping on, you are doing a great job!!!

Thank you, Phyllis π π I’m so glad you enjoyed the spinach biscuits. I love the idea of making the larger and flatter for buns. The recipe is SO versatile. You can add minced garlic cloves and make garlic cheese sticks, with or without spinach, etc. Enjoy!
