I’ve had a crazy busy work week (as in: totally nuts!), I’ve been struggling with the worst bouts of insomnia & stress all week, and can I just say… TGIF!!! 😛 lol. I’ve been eating great, though…
I also got a surprise visit from my amazing and beautiful daughter who is turning 20 next week.:)
AND… I only weighed 138.8 pounds this morning 🙂 That’s a NEW low weight for me!! I’m FINALLY below 139, lol.
That took long enough, right?!
TGIF indeed. Everything turned out beautiful, but man was this ever a crazy / busy / tough / FULL week to get through – lol. Geez! Anyway, we have some catching up to do… and I have some easy low carb meal ideas to share with you!:)
Here’s what I’ve been eating for the last three days…
Tuesday’s Low Carb Meals
On Tuesday I had my usual “low carb cereal” TWICE, once with blueberries and once without – just because it’s a super easy meal, and has GREAT macros. I also FINALLY got a low carb style Frisco Burger from Hardee’s, lol. Those are SO good!

Wednesday’s Low Carb Meals
On Wednesday I had a little more interesting variety. This was a 24 hour day for me (insomnia sucks, lol). I started the day with a turkey & cheese rollup in a low carb tortilla. I’m honestly just trying to use those up! Then I had this weird “dessert breakfast” thing, lol (top right). I snacked on cucumbers & string cheese – then for dinner I had sausage & spinach topped with fried eggs. 🙂
So that “breakfast dessert” thing, yeah… I was out of all my usual stuff, so I got experimental lol. Warning: it came to 13 net carbs! 😯 🙂
It’s 2oz cream cheese, 2 tbsp natural creamy peanut butter, 35 grams blueberries and 1 serving (42oz) of Nut & Flax Cinnamon Granola (the granola is SO good!!).
I used the smaller granola crumbles from the bottom of the bag for this…
It was like cinnamon blueberry peanut butter pie. 🙂 An awesome flavor blast!!

Thursday’s Low Carb Meals
I started off simple with an easy low carb breakfast of 3 eggs scrambled with colby jack cheese in real butter. Eggs are .4 carbs each, so 1.2 carbs total and 75% fat.
Simple! And it follows the 3IMAX rule. 🙂
For lunch I finished the sausage & spinach combo, added an ounce of cream cheese and fried two eggs on top of it. YUM!
This is actually venison sausage, courtesy of Joe. He used my sausage/spinach recipe and helped me stay fed through my crazy week.:)
For dinner… I had breakfast. 🙂 This is my favorite “low carb cereal” made with 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries. (6 net carbs and 85% healthy fat)
My daughter popped in last night for a surprise visit. 🙂
We got low carb take-out from Gondola Pizza & Steak House. I got grilled chicken and roasted veggies (I feed the carrots to my dane).
It made for a great meal, and of course we had a super fun visit!! I wasn’t very hungry so I just ate one chicken breast. I had the rest for breakfast this morning.:)
I had 8 coffees yesterday (I was up for 22 full hours again!) and each of those large mugs had 1 TBSP of Coffee-Mate Sugar Free Hazelnut Powdered Creamer in them (which is 1 carb per TBSP). I also had 9 waters. So yes – I get most of my Fitbit Steps walking to the coffee pot and the bathroom, lol. 🙂

Joe popped in a few times throughout the week to bring me that big beautiful low carb burger and a couple other meals, and he always seems to sneak a picture of me behind my back! This one, literally -lol. I was getting some work done, but stopped real quick to log my meal in MyFitnessPal…
I was thrilled to see the scale move this morning. 🙂
I’ve been eating low carb anyway, but it’s always nice when the scale DOES finally budge – especially if you’re a super slow loser. Of course I’m very close to a goal weight now, so it’s just going to creep from here – which is fine. I really need to be focused on toning (working out) but I’m seriously slacking on that lately…
How are things going for you?
It’s day 33 and we’re ending the 5th week of the challenge. We’ll weigh in again on Monday! 🙂 How are you doing with your low carb meals & macro tracking? Any questions or struggles? I would love to hear your results so far…

Hi Lynn, Your chicken looks so good I am about ready to take a road trip south to try some! I did try your chicken and broccoli cooked in cream of chicken soup. very good! I did not eat much sauce either, but it still had a great flavor. I have been busy this week with a horse that got sick on the lush grass caused by all the rain we have had lately. Ugh. Tomorrow, my 7 month old grandson is coming to visit while his parents go canoeing down the buffalo. Let me just tell you, I may get more exercise than my daughter keeping up with this little man!
Have a great Labor Day Weekend! I will be low carbing all weekend ! I may try that cheeseburger pie I saw posted this week. Or wings, so many choices!

I’ve been eating low carb for 5 1/2 years, but after doing great the first year… I got really sick, went on hormone therapy, later had an emergency hysterectomy (that did NOT go well) – with a ridiculous 5 month recovery (lots of bed rest). There were also several major losses with much grief. It was a rough start. π

I’ve been bad again, having a hard time sticking to this 90 Day Challenge this time, started losing again when I went back on the program, then went just went off yesterday and gained again. I’ll get there, weekends are hard :(.
And I still have a sweet tooth, maybe because I’m eating SF candy? I found the most delicious candy from Russell Stover, sugar free BITES, they have Blueberry and Cranberry, “fruit flavored centers enrobed in smooth dark chocolate”. I LOVE the Blueberry. Ten pieces 1g carb.

Hi Roye π I’ve been through phases like that, I get it. The best thing to do is identify WHY “weekends are hard.” From there you can decide what to change, even if that’s just… changing your mind.:)
The sweet cravings are most likely from going on/off plan. You aren’t staying in ketosis long enough for those to go away. I say that because I don’t have sweet cravings at all anymore. The BITES do sound good though! I haven’t even been eating my favorite sugar free candies lately though – just zero cravings at all…
And yeah – the Keto Krate guys are GREAT. I have been so impressed with them!! I’m so glad you got “in” and got the discount too! You’ll love it. π

Thanks Lynn, weekends are hard because my hubby and I are home together all weekend and it’s usually “Fun Friday” (pizza), and “Fun Saturday” (tacos), and “Fun Sunday” (lasagna) LOL, well you get the idea. So it’s hard but I’ve been doing it all this time, just didn’t feel like it this weekend, I caved. :(.
And I did look up Maltitol and found this on one site, I’m sure there are several differing opinions.
“Recommendation: Skip it. Although itβs one of the most commonly consumed sugar alcohol, it has quite a high glycemic index and can cause a lot of gastric distress. Not to mention many people complain about it kicking them out of a ketogenic state.”
Will be giving up my favorite SF candy now :(.

It does stall some people. I eat so little of it. It’s rare anymore I even have a piece of sugar free candy. But even back when I ate it pretty regularly… it didn’t stall MY weight loss. But I’ve heard it does for some.
Do you have those same three meals every weekend, like a tradition – or were those examples?
For taco night, with my family I just made mine on a bed of lettuce as a taco salad (which was there for the tacos anyway).
For pizza night, I just ate the toppings – and naked wings (not battered, no sauce, dipped in ranch). That’s always a nice treat!
Lasagna is a tough one, lol…

Hi Lyn. Have not been commenting. I had a super busy week and a bit stressful as well. I am staying low carb throughout the busy stressful week with some low carb chocolate candy ( russel stovers pecan ) to get me through. Lol.
The insomnia is a big problem for me too.
I hope i show a loss this week. Last week i was around the same weight. I might have lost .2 of a lb. I am not trying to worry about it though.
I still MUST get that liw carb granola. I am going to order it soon.

Not yet, they finally finished tearing it down and they’re now building – which is a plus π lol. I miss my Hardee’s like crazy!!
I wondered how you were doing.:) Seems like a lot of us went through a crazy week, lol. Geez! I’m glad to see that one over! haha
My weight is still fluctuating all over, which is pretty normal. I’m sure it’ll settle this week as I get back on schedule – now that I’m sleeping more again. Yay! Glad to hear you’re sticking it out too!!:) *cheers*

Hi!! π I’m in Tampa Florida. Glad to find you. I was vegetarian for 20 months previous to my Keto start last week. I don’t eat cows or pigs. I will eat wild fish & humanely raised chickens & turkeys. Provided no hormones or antibiotics. I also eat nothing artificial. No preservatives at all. I’m confused about net carbs & total carbs. Ty much ! Cat

Net Carbs are Total Carbs minus Fiber.
That was started by Atkins back in the 70’s, and here is their explanation: https://www.atkins.com/how-it-works/library/articles/what-are-net-carbs I do 20 net carbs per day, but the cleaner you eat, the closer your net and total carbs are. It just gives you more room for fiber-rich green vegetables, berries, and other healthy additions.

Hi Janell,
I love broccoli slaw (from the produce section) and it has shaved carrots in it but it’s still super low carb so I use it all the time. In very small amounts as a garnishment or whatever, as long as the slaw itself is low carb I think it’s fine.
If you notice any inflammation, water weight, etc, then you’ll know it’s NOT fine for you, but like I said in such a small amount it should be okay.
