My scales were back down to 148.6 pounds this morning. 🙂 That felt good.
Today is Day 3 back on track, so I expect the keto flu symptoms will hit today or tomorrow. That won’t feel good. 😛
I’m keeping my low carb meals super simple of course, which you can see below in my low carb food diary for yesterday.
I had another great day. 🙂 My little brother came by for a visit, which meant Slim (my Great Dane) got to meet his cousin – Grimly the Poodle. haha, that was fun!
It was cooler weather here in Tennessee too, so I ended the day by a nice warm campfire. Friends, family & healthy foods… it made for a perfect day!
Here is my Low Carb Food Diary for Day 41 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s not too late to join us if you haven’t already!
Day 41: Saturday’s Low Carb Meals
I started the day with my favorite low carb breakfast: 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries = 5 net carbs and 85% healthy fats.
I had a simple low carb snack later in the morning, left over from last night’s fun spread: Oscar Meyer turkey slices & colby jack cheese off the block. Easy!
Then I grabbed a quick low carb lunch from Hardee’s: a 1/3 pound thickburger with a lettuce wrap, plain with cheese & mayo. (zero carbs)
For dinner I also had fast food from Hardee’s, this time a Big Hot Ham & Cheese from Hardee’s (“no bun, please!”).
Late last night I snacked on a handful of Almonds (1 ounce) and had a slice of American cheese. Yes, the processed kind in the little wrapper. 🙂
Those babies are 2 carbs per slice! 😛

Slim enjoyed hanging out with his “Uncle Will” (my little brother) yesterday. 🙂 It was great to see him and my sister both in the same week! We all have busy lives and we’re spread out all over and travel quite a bit – so the family time was a nice treat!
I didn’t get a walk in yesterday. I decided to take it easy after the walk & hike from the day before. 🙂 I may walk this afternoon, I should – Slim would really enjoy that. And I’m definitely doing my Ab Carver Pro workout today. I haven’t done it in a few days!
Outside of a nice brisk walk, I’m planning to stay in today. I have sausage and eggs I can cook, and the ingredients for Justine’s stuffed mushrooms too so I may try that – if I feel adventurous in the kitchen. 🙂

After not losing anything the last week, the scale finally moved this morning and I lost 1-1/2 lbs. It’s so frustrating with 30+ pounds to lose that it is going so slowly, especially since I’m sticking to the plan and I’m walking almost every day. Arghhhh!

I went through that too, Betsy – for several weeks on end earlier in this challenge. Just stick it out. It’s SO worth it!!
I don’t know how long you walk, but trade that up some days for strength training. Target the areas you want to work on. I’m targeting core and upper body (abs and arms mostly) for example.
You were sick last week too, right? That always stalls me! The scales moving down is a GOOD sign. π

Funny you should mention strength training. My husband and just joined the gym at the senior center. They have a decent amount of machines and hand weights – enough to get the job done. I’m having dental surgery on Wednesday so I probably won’t start until next week – and I probably won’t walk much this week, but I will be eating soft, blenderized food for several days. But I think I’m prepared for it and will stay on plan. Wish me luck!

Wow your weekend looked fun and fun filled. And congrats on the scale moving…again. lol. I’ve been pretty busy myself this weekend. We took another trip to our local theme park here in VA…busch gardens. I love going there and this trip we only had our two youngest so there’s no many rides we can ride but I still highly enjoy the walking and atmosphere. We circled the park a few times which I think easily equals to a few miles. I also have stayed on track Friday and yesterday. Today on the other hand I had a visit from my sister who brought a not so low carb starbucks drink with her for me as a surprise and I drank it…I drank the whole dang thing too lol. Although I enjoyed every sip of it I’m honestly tired of this on and off game I’m playing with myself. It’s gotten old pretty darn quick.
Ya know I have a “goal weight loss” of 50 pounds that I want to lose before the end of the year. If I would have stayed on track and not done the Rollercoaster dieting just to have that small amount of temptation I could’ve lost that goal weight and some years ago. And that really makes me mad at myself. So I’m done. I’m done with the games, I’m done with cheating and cheating myself out of great results and confidence. No more “treats, cheats, little bite of this or that”. I’m done. I’m doing this right and fully committing myself to this 100% for the next 49 days.

Also, good luck Lynn with the stuffed mushrooms. They are soooo delicious I promise you’ll want to eat the entire pan lol.

I feel the same way, Justine. In hindsight, I realize just how much I sabotaged my goal of getting lean and strong – for SO long. And like you, I am super committed this year. That feels SO good!!
I took a nap today and the scales moved again: 147.8 now. π
I still have those moments all the time – options, temptations, the “why not” moments. Last night I thought about having a crescent or a piece of pumpkin bread, because it was there (at a friend’s house, not mine) and because my stomach felt a little off. That’s when I had the piece of sliced processed cheese, lol – that and a handful of almonds. Close call. π
I like that I am at least thinking about it now, and not just mindlessly eating like I used to. Or saying to myself, “I’m not losing weight anyway, so why not.” Well no wonder I wasn’t losing! haha Geez
I saved your mushrooms recipe. I may make those this evening. π Thanks again for that!

Lynn, mindless eating…ugh! That is what I have been doing lately. That darn mindset of I’m not losing anyway, so why not. Duh, that is why I am not losing! Maybe today will be the day I can tell myself NO and remind myself that is why I am not losing. Thanks for your daily posts and comments.

It makes no real sense, but somehow it makes total sense in your head at the time – lol. I know exactly how that is! Our minds can rationalize anything in our favor, though. π
